Harvesting tip: As you take your winter squash out of the garden in the next few weeks, consider oiling the surface with olive oil and a paper towel and get into the crevices of the squash. This will prevent mold from attaching to the skin of the fruit and should allow your squash to last well over 3 months at room temperature. I have heard you can also use a thin layer of paraffin wax in place of olive oil.
