Therapeutic Recreation is a profession which recognizes leisure, recreation and play as integral components of quality of life. At Bishops Gardens safety is our priority and winter safety is especially important - particularly on days like today! Here are some tips from healthyaging.org on winter falls prevention: It’s easy to slip and fall in the winter, especially in icy and snowy conditions. ... Some precautions to take are: Ensure steps and walkways are clear before you walk. Be especially careful if you see wet pavements that could be iced over. Clear away snow and salt the walkways at your home, or hire someone to do it. Wear boots with non-skid soles this will prevent you from slipping. If you use a cane, replace the rubber tip before it is worn smooth. Consider an ice pick-like attachment that fits onto the end of the cane for additional traction.

Chef Matthew Evely's Traditional Christmas Pudding Recipe. He is looking forward to sharing it with our Residents! "Flamed Christmas pudding with Crème Anglaise" ... We started this tradition 12 Christmas’ ago when our oldest was just a baby and we hope you enjoy this old recipe as much as we have! It is can be made well before Christmas and we usually make it the year before and then store away in a cool room to mature. The day before you plan on steaming the pudding, thoroughly mix all ingredients in a large bowl and then cover with a clean tea towel. It is best left out overnight in your coolest room to allow the flavours to develop. 125g Beef suet 25g Finely chopped candied peel 25g whole almonds chopped 225g soft dark brown sugar 100g sultanas 100g raisins 300g currants 1 Christmas apple cored and grated, skin on Zest of 1 orange, micro planed is best Zest of 1 lemon, micro planed is best 1 jigger black rum 150 mL porter 2 large eggs 100g sifted flour 1 teaspoon baking powder 125g fresh breadcrumbs 1 teaspoon ground mixed spice teaspoon freshly grated nutmeg teaspoon ground cinnamon The next day mix up your pudding and pour into a 1.5L pudding basin (I use a 1.5L Pyrex bowl). Wrap the bowl with parchment paper and then aluminum foil and place in a steamer and allow to steam for 8 hours. Be sure to check the water often so the pot doesn’t run dry. Allow the cooked pudding to cool, remove coverings and then rewrap with fresh parchment and foil to store away. On the day you intend to serve, steam the pudding in the same fashion for 2 hours to warm. Then unmold and pour cup of warmed black rum over the top and carefully light it. Allow the flames to burn out and serve with your favorite custard sauce. Crème Anglaise This is best made the day ahead 1 cup whole milk 1 cup whipping cream 1 vanilla bean, split 6 large egg yolks 6 tablespoons sugar Combine the milk and cream in a heavy saucepan. Scrape the seeds from the vanilla bean and then add the seeds and the bean to the milk mixture and bring to a simmer. Remove from heat. Whisk egg yolks and sugar in medium bowl to blend. Gradually whisk hot milk mixture into yolk mixture and return the custard to saucepan. Stir over low heat until the custard thickens and leaves path on back of spoon when finger is drawn across, about 5 minutes and be sure to not allow the sauce to boil or you will have scrambled eggs! Strain sauce into bow then cover and chill.
