Recipe of the Day: Halibut with Pumpkin Seed Gremolada Served with White Bean Cassoulet and Spicy Tomato Broth... 45oz portions of Halibut 1 cup Toasted Pumpkin seeds 12 garlic cloves 2 inch piece ginger minced 4 cups Dried White Beans (soaked overnight) 4 Large Cans Diced Tomatoes 1 Small can tomato paste cup white wine 2 cups vegetable stock 3 Bunch Basil chopped 2 carrots roughly chopped 3 stocks of celery Chopped 2 onions Small dice 2 tsp chili flakes cup veg oil 2 Bay leaves 3 sprigs thyme 2 chives cut in half Salt & Pepper Marinate Halibut Mix 4 minced garlic cloves with minced ginger and 4 leaves of chopped basil. Mix into veg oil and add to halibut. Leave for 2hrs min. White Bean Cassoulet Soak White Beans in cold water over night if not done already. In a med sized pot sauté diced carrots, onions and celery. Add 4 cloves minced garlic and tomato paste, cook out. Add wine thyme and bay leaves. Cook for 3 min. Add beans, stock and 3 cans diced tomatoes. Turn to low and cook covered for 4-6 hours stirring occasionally to prevent sticking. Remove lid and reduce to desired thickness. Season to taste. Spicy Tomato Broth In a medium Saucepan sauté 2 cloves of mined garlic till just browning. Add last can diced tomatoes and chili flakes. Cook for 10 min on medium heat. Puree and strain through fine mesh strainer. Season to taste. Basil & Pumpkin Seed Gremolada Take remaining basil and add to a bowl. Chop toasted pumpkin seeds and add to bowl with basil. Add last two cloves of minced garlic Finishing Season halibut with salt and pepper. On high heat cook halibut to medium (140 Degrees) to get a nice sear. Rest for 5min on resting rack. Plating Scoop Cassoulet into center of a bowl, Pour tomato broth around outside of cassoulet. Place halibut on top of cassoulet and top with Gremolada. Garnish with chives

Recipe of the day: Pork Roast Dinner! Pair with a glass of @deserthillsestatewinery Cabernet Franc... Recipe: Pork: Start with a pork rib roast or loin roast if you want something less fatty. In a large Ziploc bag add 1/2 cup vegetable oil 3 minced garlic cloves, 1 tbsp minced ginger, 1 tbsp Italian seasoning and 1/2 tsp chili flake (optional). Mix well. Add pork roast to bag and massage marinade into and all over the roast. Let it marinate in the fridge for 1hr-overnight. In a roasting tray add 3 roughly chopped carrots, 2 yellow onions chopped and. 3 stalks of celery roughly chopped with 1cuo of water and a bay leaf. Take pork out of bag and place on top of vegetables. Pour rest of marinade over top of pork (don't waste that flavour ). Place in 375 degree preheated oven uncovered till the internal temp reaches 150. Remove and let rest for 20-30min at room temp. Slice and serve Mash potatoes: 5 large Yukon gold potatoes peeled and chopped into large chunks. Boil for 20-30min or till very tender. Drain. Add 1/2 cup butter and 1/2 cup milk to a pot and warm. Add potatoes and mash till smooth. Season to taste. Carrots Peel 5-6 carrots, slice in half and boil in water for 3-4min till just floppy but still firm. In a pan melt 2tbsp butter and add 1 clove of garlic minced. cook for 1 min, add carrots with a pinch of salt and pepper. Cook for 2-3 min on medium. Gravy: Take all the vegetables and drippings from roasting pan and add to a med sized pot. Add 2 cup of water and boil for 10min. Stain out vegetables and return to pot. On medium high heat reduce liquid by half. I'm a small bowl mix 2tsp corn starch with 2tbsp cold water. Add to pan with liquid and stir to combine. Continue to cook for 2 min or till thickness level desired Assemble Slice pork, place mash on a platter, add carrots on top, place pork on carrots, spoon over sauce. This is a basic pickling liquid, you can add in a wide variety of your favorite fresh herbs, whole spices, and seeds and play with many different combinations. Recipe: yields approx. 2 L ... 5-6 cups of veggies 8-10 garlic cloves 4 bay leaves 1/2 tsp peppercorns 1/2 an onion, sliced (optional) 2 cups vinegar (apple cider vinegar, white vinegar, red wine) 6 tbsp sugar 2 tbsp salt 2 sprigs of herb prepare all your veggies by cutting, slicing or leaving whole. Bring water, vinegar, salt and sugar to a boil in a small pot. Pack your mason jars with veggies, and divide the garlic and whole spices between the jars. Layer the veggies in the jars with any fresh herbs you decide to include leaving about an inch at the top of the jar. Using a funnel or a large measuring cup to carefully pour the hot liquid into the jars, making sure to submerge all the veggies. Cover and let sit on the counter to cool, refrigerate after an hour. The veggies should sit for about 6-8 hours at least but they are much better after a few days. You can keep them in the fridge for up to 3 weeks. Long term storage: If you are planning to can your veggies for long-term storage, bring a large pot of water to a boil and sterilize the jars and lids. Place the pickling liquid in saucepan over high heat and bring to a rolling boil. Pour the brine over the veggies in each jar almost to the top. Remove air bubbles by gently tapping the jars against the counter a few times. Top off with more pickling liquid if necessary, then tighten the lids. Place the filled jars in a boiling pot of water to can them. When the water comes back to a boil, boil the filled jars for 5 minutes then immediately remove, making sure the lids pop down. Enjoy!

It pairs well with any plate of meats and cheeses and your favorite wine. It is also a great project to teach kids self sufficiency and reduce your grocery store trips during these unprecedented times. ... 1 tbsp active dry yeast 1 tbsp sugar 1 tbsp salt 2 cups warm water 6 cups All-Purpose Flour flour for dusting INSTRUCTIONS Making the dough: Mix the yeast, sugar, and water in a large bowl. Let the yeast start to bubble up in a warm area, approximately 5 minutes. mix the salt into the flour, and gradually add the flour one cup at a time to the liquid. Mix thoroughly with your hands until the dough starts to pull away from the sides of the bowl. Turn the dough onto a floured surface to knead, and scrape the remaining dough out of the bowl. Kneading dough: - Fold the far edge of the dough back onto itself towards you. -- Press into the dough with the heels of your hands and push away. - After each push, rotate the dough 90. - Repeat for 5 minutes *sprinkle a small amount of flour only to prevent sticking. Let the dough rest while you clean up, then grease a bowl with a bit of oil or baking spray. Knead the dough again for 3 minutes. Letting It Rise: Return the dough to the bowl and turn it over to grease the top. Cover with a damp towel and keep warm for about 2 hours until the dough doubles in size. Shape it: Punch down the dough and briefly knead out remaining air bubbles. Cut the dough in half and shape into classic loaves. Place the loaves on a parchment lined cookie sheet and let the loaves rest again for 5 minutes. Bake it: Lightly score the tops of the loaves 3 or more times diagonally and brush them with cold water. Place a roasting pan on the bottom rack of the oven and fill it an inch deep with boiling water. Bake at 400F for 35 to 45 minutes, until the loaves are golden brown and sounds hollow when tapped. If the grocery stores are all out of yeast due to shoppers panic buying, another fun alternative would be a quick bread like Irish soda bread. Soda bread leavens with baking soda and an acid like buttermilk, if you dont have buttermilk, any vinegar and milk (or a milk substitute) would also work. Enjoy!

Recipe of the day: Indian Inspired Whole Roasted Cauliflower We paired with red wine roasted beets and asparagus. Recipe:... Remove core of cauliflower with a knife. Marinate cauliflower 2hrs to overnight in a mixture of 1/2 veg oil, 2.5 tbsp garam marsala (any Indian spice blend will work, if you don't have some use cumin), 2 cloves chopped garlic, 2 tsp minced ginger, 1 tbsp salt, 2 tsp pepper. (See last photo) Preheat oven to 375 and roast for 40-60min depending on size of cauliflower. Beets we put into a shallow roasting pan with 1/2 cup syrah and 1 cup water with salt and pepper, covered and roasted along with cauliflower. Asparagus was simply sauteed in butter with garlic Place on board and serve family style with chopped cilantro to garnish Would also be really nice with some cilantro and lime infused yogurt if you have it. Dinner ideas to help keep your meals fun and exciting. Today's dinner idea is Curried Chicken Noodles. Rice noodles, chicken, carrots, onion, peppers, mushroom. Boil rice noodles till cooked, thinly sliced all vegetables into match sticks, chicken into thin slices. Sauteed chicken till 75% cooked, add vegetables and sauteed for 5 more min (don't over cook veg)... Such an uncertain time we are in... it’s hard to know what to believe at times, or what to expect in the future through all of the chaos. Jobs, mortgages, education etc... it’s an immense unknown. One thing stands for certain: It will be a great show of how we stand together.... Don’t let fear breed fear but rather let kindness kill the fear and calm the masses. Be kind. When shopping, take ONLY what you need to give others the opportunity to do the same. Take only what you need, to give grocers and suppliers the ability to keep up. Create a flow to ease the pandemonium. Look out for your neighbors. You can still lend a helping hand while practicing social distancing. Understand the gamble you take (with someone else’s life) when you fail to protect those who are vulnerable by selfishly filling your own needs and not minimizing exposure. This virus will indeed spread... it’s only a matter of time, and most of us will be minimally affected. The issue at hand, is how quickly it attacks the immunodeficient, elderly & vulnerable and the hardship that it will place on the health system. It’s not about YOU and your excellent immune system. Be kind. Be intentional. Take this unorthodox gift to exhale from the accepted craziness we call everyday life. Take this as an opportunity to breathe and regroup. Take this time to reacquaint yourself with YOURSELF and those important relationships in your life. Enjoy your children. Get back to, and recognize the important things in life. Have & show gratitude. Be still for awhile. It will all work itself out. Don’t allow fear to distract you from the basic principle that people are generally good & kind.
