Mango Lassi made with our dairy-free cultured coconut no’gurt can be found at @traveltheeast_foodtruck . Unless you make it yourself, an authentic dairy-free Lassi was almost impossible to find. Made with all the savory, sweet flavors and freshly cultured yoghurt the Mango Lassi at the Travel the East food truck is a real treat. . Happy New Year! We have some big news to share. We are excited to announce that this Sunday will be our first time at the Vancouver Farmers Market @vanmarkets ! We’ll be at Hastings Park Farmer’s Market this Sunday from 10 am to 2 pm sharing our delicious dairy-free cultured and aged cheeses. We also need your help! To get into the Vancouver market’s regular schedule, we need your vote to prove that you want to see us at more markets in town. Fans of mold ripened cheeses! This weekend is for you! . We make a variety of mold ripened cheeses and release them when they are ready and this weekend we have some special cheesy treats for those who appreciate a bloomy rind and an earthy nose. . The images:... 1. As @traderjo_lene said, meet our Gothic pac man set up. This progression begins with our Cormorant cheese on the left, and is followed by Cormorant with light bloom, then a fully enrobed Corvus and finished by an extra aged Cormorant. . 2. Corvus: this cheese begins the same way as Cormorant but then we alter course with it's treatment. It is innoculated and allowed to grow a full mold covering of its surface (white and blue molds), and is soft, almost brie like and has an earthy mushroomy nose and flavour and is complex without being overly pungent. . 3. Corvus with Extra-Aged Cormorant. Extra Aged Cormorant has big umami notes, and a complex wine like tang. This cheese is great on sourdough bread paired with a crisp cider or beer or white wine. . 4.Bloomy Fig Cumulus: a classic flavour combination is fig, blue cheese and red wine. These three meet in this version of our Fig Cumulus which has been encouraged to grow some blue mold. It is creamy, mildly salty and earthy sweet with some wine notes from @winecrushtechnologysinc wine lees wash. This would work well crumbled over a roasted beet salad with arugula and a tarragon dressing. . . We also have some new release of Main Street Cheddar and the new, smoky sweet Burnished, which reads sort of between a cheddar and a gouda. . Swing by our shop this weekend! ANNOUNCEMENT!! . Today, Blue Heron Creamery removed conditions from our new manufacturing facility! . We move in to the facility on Feb. 1 2021, and after implementing our build out plan, will be jumping into production and preparing to launch our first 5-6 skus across Canada by mid spring of next year. ... . It is overdue, it has been long dreamed of, and now, with no small amount of thanks and gratitude to a great number of people, we officially begin the scale up and finessing we have been so eagerly anticipating. . This post won't be able to encompass all the things we want to say, but we will be very excited to share our progress, and launch dates and soon, some very exciting r&d. . We will soon be hiring for our new production team (stay tuned for a post specifically about that). . We are not ceasing production while we work on this new facility so rest assured for Metro Vancouver we will still be supplying our current suppliers and storefront. . We look forward to sharing more news, and expanded store hours/days in the new year. . NEW small batch release! . . Tomorrow is exciting because we welcome @flourgirlbaking and their brand new vegan tortellini (3 flavours feature our cheese!). .... . But it is also exciting because we are releasing a very small amount of a new style of cheese in 2 flavours. . Meet 'Wild Rind Laurel' and ' Wild RindLaurel' with fennel. . These cheeses are almond/coconut based, infused with bay leaf (and one has fennel seed in addition to bay leaf). The culturing process for these cheeses is different than our other cheeses and they also experience surface culturing during aging, which is evident by the 'wild rind' which shows evidence of the different inoculations. . These cheeses are dense, creamy, semi-firm, deeply umai, lightly piquant, and a little bit mushroomy on after taste. They slice very thinly, and ahred very well without needing to be frozen. . . CHEESEFO (cheese + info): . Smoke and Spice. This cheese has also been one of our foundation cheeses, but is also one of the cheeses that we continually evolve. . It has seen many iterations and adjustments. We believe in seeking continual improvement, since there are always factors that you cannot control as a producer despite what some will have you believe.... . . There is a famous quote about the limitations of a 'foolish' consistency...,..... while we DO aim for a general consistency of a style of product, in our effort to get to the ultimate version of what we are trying to do, changes and tweaks are made. . . The particular version we are producing these days incorporate a rind washed with @kulakitchen Pili Pili sauce, fermented habanero paste (by us), and smoked paprika, because this wash is working better than using just a dried spice on the rind given the current summer challenges of our aging space. . Cheesefo ( cheese + info), a series. . We regularly encounter guests who are new to our cheeses, or our method of making cheeses, so, we thought we would do a mini series of posts introducing or re-introducing ourselves and our cheeses. . First up, Cormorant: this cheese has been one of our 'foundation cheeses'. One of the first 4 we have regularly produced. ... . A cashew based cheese, it is cultured, ashed, and then goes through a secondary culturing process with mold innoculation (using cheesemaking molds, not just random molds!). . While we wash the molds off, they will and do re-bloom as is shown in this photo. This is typical and expected for this cheese...and occasionally we let a few of them fully develop this surface growth and allow the cheese to undergo further changes. . . If you happen to buy some of this cheese and you encounter this bloom and are not into keeping it on the surface (we have some guests who want more growth), you can simply rub it off with paper towel, and we recommend NOT wrapping the cheese when you put it back in the fridge. . As we prepare for our eventual move into scaled up manufacturing, we are evaluating our cheeses, which ones will change, which ones may be removed, which ones will undergo re-imagination. .
