Hello! Happy Canada Day to a nation where the maple leaf is part of our identity! Please stay safe while celebrating. We wanted to share with you recipes for maple cupcakes and maple frosting. Both recipes are delicious and are quick to be eaten around our farm. Maple Cake 1/2 Cup Shortening... 3/4 Cup Boddy's Maple Syrup 2 Eggs, beaten 1 Teaspoon Vanilla 1/2 Cup Sugar 2 Cups Flour 1/2 Teaspoon Salt 2 1/2 Teaspoon Baking Powder Optional: 1/2 Cups Walnuts or Pecans Preheat oven to 375f. Blend shortening, Boddy's Syrup, eggs, vanilla, and sugar. Sift flour, salt, baking powder into the wet ingredients and stir in nuts until well mixed. Bake for 20 minutes. Allow cupcakes to cool before icing. Maple Frosting 1/4 Cup Soft Butter 1/2 Cup Boddy's Maple Syrup 1/2 Teaspoon Vanilla 2 1/2 Cups Icing Sugar Blend the ingredients until smooth. Add a little milk to make the icing less firm. Add food colouring if desired. Enjoy!
