Mother's Day Brownies Mother’s day is around the corner and if you are thinking about baking her something these gluten-free dairy-free black bean brownies are delicious. Black Bean Brownies Makes 12-16 servings | Gluten and dairy free Ingredients: 1/4 cup coconut oil 1/4 cup dark or semi-sweet chocolate chips 1/4 cup cocoa powder 1/4 cup maple syrup 1/4 cup applesauce 3 eggs 1 can black beans drained and rinsed 1/2 tsp vanilla extract 1/4 tsp salt Optional: 1/4 cup chocolate chips and 1/4 cup chopped nuts Directions: 1. Preheat oven to 350 2. Grease an 8X8 or 9X9 baking dish 3. Melt the coconut oil and chocolate chips together. 4. Combine the melted coconut oil and remaining ingredients together in a blender. 5. Puree until smooth. 6. If you want to, stir in or sprinkle the optional chocolate chips and nuts into the batter. 7. Pour into the prepared baking dish and bake for 35-40 minutes or until set. 8. Cool completely before serving. 9. Top with whipped cream. If cut to serve 12 there are 15 carbs and 3.5 grams fiber per serving and if cut to serve 16 there are 11 carbs and 2.5 grams fiber per serving. Dr. Janice Shouldice N.D.

Berry-Grain Salad Recipe With the nice weather here to stay, I find myself wanting to spend more time outside and that often includes barbecuing and preparing salads. Here is one of my favourite salad recipes that is perfect for summertime eats, and its always a hit at potlucks anytime of the year! Its light and flavourful with a pinch of spice and sweetness. This salad was introduced to me through a cooking class I attended from Ricki Heller, a Registered Holistic Nutritio...nist. I have adapted it to my taste preferences for you below. Experiment and enjoy! Salad 1 c dry quinoa 1/2 c dry buckwheat (kasha) 3 c water or vegetable broth 1/2 c chopped walnuts, lightly toasted 1/2 c dried cranberries 2 celery stalks, chopped 1/4 c sunflower seeds, lightly toasted 1/4 c sliced green onions 1/4 c chopped parsley or cilantro Dressing 2 Tbsp extra virgin olive oil 2 Tbsp flax or hemp oil (or use more olive oil) 3-4 Tbsp raw honey or pure maple syrup 1/4c fresh squeezed orange juice 1/2 tsp ground cinnamon 1/2 tsp ground cumin 1/4 tsp ground nutmeg 1/2 tsp sea salt, or to taste Directions: Bring water or broth to a boil. Rinse quinoa well and add to pot along with buckwheat. Reduce heat to low, then cover and simmer without disturbing for 20 minutes. Uncover (all the water should be absorbed) and let sit to cool. Fluff with fork and turn grains into a large bowl. Add walnuts, dried cranberries, celery, sunflower seeds, green onion and cilantro and toss to mix. In a separate bowl, whisk together all the dressing ingredients. Pour over salad and toss to coat evenly. May be served immediately or covered and refrigerated overnight.
