Either way this peanut sauce will bring a new adventure to Wednesday night supper. . It's the weekend of Valentine's Day. Are you planning anything special? Romantic maybe? Food & romance go hand in hand. .... I created this Bramble Hill Pink Pasta dish to knock your socks off (well maybe not your socks if you get my drift heheheh....was that bad?) . But I promise you have to try it - it will become a new fav by everyone. Simple, delicious & vegan. Yes us meat-a-tarains need a few more vegan means up our sleve! See recipe below. . PINK Pasta topped with fresh Bramble Hill Pea Shoots SAUCE 1 - roasted beets approx 3 cups chopped (roast in tin foil, olive oil & salt & pepper) 2- in food processor blend: roasted beets with 1/3 c cashews, 1 garlic clove, 1 tbsp lemon juice, 3 tbsp olive oil, 1/2 tsp salt PASTA cook up your desired noodles. Mix together in spoonfuls in the pot with a fork so all noodles get coated with the sauce. Plate it up & pile the Bramble Hill Pea Shoots high on top. I like to chop my shoots once of twice before using so they are perfect eating size and you can just stir them right into your food. Pull out the fancy vintage cutlery even if you are using Ikea plates.
