I tried to leave this in real time but I just couldn’t handle it... slowing down is so hard and real time feels slow! But today we need to slow down, and feel real time - to remember that there are people living in war torn countries right now. To remember the men, women, and children who have lived and died in war. And to truly appreciate the sacrifice, as best we can, even if we don’t really know. And I for one can say I don’t really know the pain, terror, loss of war - and I am forever grateful for that. A recipe to be THANKFUL for!! Honey Oat Sourdough for the busy baker - don’t forget to save it! Mix together 145 grams Whole Wheat Flour 120 grams quick oats... 200 grams fed starter 735 grams All purpose flour 300 grams water 400 grams milk Becomes fairly stiff dough Wait 30 min Add remaining ingredients 20 grams salt 35 grams water 40 grams honey Squeeze to mix - will be very sticky to incorporate Let sit for 1 hour - these start turn and stretches - 3-4 times at 30 min intervals until dough feels good Shape, spraying top lightly with water and rolling in large flake oats. Set to rest/proof on counter top down in banneton for 1 -2 hours. Fridge for 12-24 hours. To bake - pull out of fridge 30-40 minutes before bake. Score and bake at 450 covered for 20 min, uncovered for 16-18 min. Then coat in melted butter while cooling for a soft delicious crust!

Mix this recipe for dough as usual (see our steps on www.breadllamas.com/2020/06/06/sourdough-basics/). Add the pumpkin and spice/salt during the first turn after mix. The dough will be wet. Trust it. It is soft but comes together nicely with stretching and shaping. Bake as usual (see website for ours). Ingredients 400 grams AP flour 100 grams @anitasorganic Sprouted Spelt Flour. 300 grams water 120 grams active starter/levain 150 grams pumpkin purée 5 grams pumpkin spice mix 12 grams salt Tip *if you are a beginner and need easy to shape dough, use 250 grams water instead, OR 120 grams pumpkin purée. Practice scoring at various depths- from deep slashes to lights skim on the surface, all these lines bake up differently. Your bread will rise! So direct it where to go with deeper scores and then use the light touch for your designs. And of course - a sharp blade! I love a small handle with a good pencil grip for my scoring. ... As the sun sets on the summer, and we wait for the fall rains - are you looking at the amazing details around you? If I’ve gained anything from all this photography it’s a closer look at the beauty that is naturally surrounding us everyday. And what better inspiration for art? It really doesn’t get better than that! What’s inspiring you lately? Where will it take you? This loaf is made with our Artisan Sourdough Bread Recipe! See below... Artisan Sourdough Bread 300 grams water 400 grams milk 200 grams fed starter 900 grams all purpose flour 100 grams whole wheat flour (or spelt) 20 grams salt 50 grams water Mix together water, milk, starter, and both flours. Reserve salt and 50 grams water. Stretch, fold, knead, or mix using powered mixer until incorporated and forming a ball. Let sit for 1 hour. Add salt and remaining 50 grams water. Stretch, fold, knead, or mix using powered mixer until incorporated and forming a ball. Let sit for 1 hour. Then stretch and fold for 3-5 min every 30 min, for 4 repetitions. Let sit for 1 hour. Shape into two loaves, placing dough in bannetons or lined bowls. Let sit for 1 hour. Place in fridge for 12-18 hours. Preheat oven with baking pan inside for 30 min at 500F. Score and bake from cold. Place scored loaf in baking pan, and bake covered at 450F for 20 minuted, then uncovered for 16 minutes. Let cool completely before slicing.
