Gluten free Chocolate Eclairs w/ White chocolate raspberry whipped cream Ingredients; - 500 ml water - 225g butter - 15g sugar... - 275g brown rice flour - 50g tapioca flour - 1 tsp guar gum or Xanthan - 6-7 large eggs Method: 1) In a pot add the water , the butter, and sugar, place on stove at medium heat bring to a boil until butter is melted, reduce heat 2) In a bowl add flour, gum, tapioca mix together 3) Slowly add the dry mix to the liquid mixing well, continue to stir until mixture comes away from sides of pot, turn off heat let sit for 5 minutes 4) Slowly add eggs one at a time mixing well after each egg, continue until all eggs are mixed in start with 6, dough should be the consistenacy of a thick cake batter 5) Pre heat oven to 350', pipe the batter unto a baking tray in a 3"line, bake in oven until golden brown for about 20-25 minutes, until large fluffy , puffed up 6) Melt dark chocolate and white chocolate in separarte bowls set aside 7) Whip up whipping cream with the strained raspberries, then add white chocolate 8) Remove eclairs from oven let cool, then cut in half set aside 9) Dip top half in chocolate set aside 10) pipe the cream onto the bottom half and place top onto bottom and finish to decorate, cool let chocolateset up then serve See more

CHICKEN SATAY IN ROASTED RED PEPPER AND YOGURT MARINADE Ingredients; Wooden skewers 6 1 red pepper... 2tbl Olive oil c yogurt or sour cream Herbs 1 clove garlic 3 chicken breasts honey Method; 1. Roast red pepper cool and peel 2. In food processor add oil pepper, yogurt, herbs and garlic 3. Cut the chicken into thin strips about thick across the breast 4. pour mixture over chicken and mix well cover refrigerate for 15minutes to 2 hours 5. Place onto skewers grill or bake 6. Brush with honey will baking , bake for 12-15 minutes

ROASTED APPLE HEMP BACON COMPOTE INGREDIENTS; - 2 Granny Smith apples diced... - 3 oz. Hemp seeds hulled - 4 oz. diced bacon - 2 tbl Balsamic vinegar - 2 tbl cider vinegar - 3 oz. maple syrup - diced red onion - pinch mustard powder - 1 oz. Hemp oil and olive oil blended METHOD; 1). Dice the Granny Smith apples and pour the oil over and let sit for about 10 minutes. Then roast in oven for about 10 minutes or until the start to become golden brown. 2). Dice red onion and bacon and cook bacon until slightly crisp and onions have started to caramelize. 3). Add the hemp seeds, the apple, the balsamic vinegar, cider vinegar, maple syrup and mustard. 4) Cook over medium heat stirring continuously so that it doesn’t stick and burn until thickens up a little or liquid is gone about 5- 6 minutes. 5). Serve as a side with turkey, duck, Pork or lamb
