How about a beautifully moist Blueberry Banana Loaf? A wonderful combination of flavours in this one. 1/4 cup Butter 1 Cup sugar 2 Eggs... 3 very ripe mashed bananas 1 cup fresh or frozen blueberries 1 1/2 cups flour 1 1/2 tsp baking powder 1/2 tsp baking Sosa 1/2 tsp cinnamon Put butter, sugar and 1 egg in mixing bowl. Beat until smooth. Beat in second egg and stir in the mashed bananas. Using another bowl put flour, baking powder, soda, salt and cinnamon. Stir together well, add all at once to the bananas mixture. Stir to moisten, fold in the blueberries trying not to let them bleed. Bake at 350F for about 1 hour until a tester comes out clean. Let stand a few minutes before turning it out into a cooling rack. And enjoy!!
