I have had several people ask me what to do with the scapes they have just picked off their garlic. First of all, congratulations on a healthy garlic crop! Here are some of my favorite things I have done with scapes. I have cut them into bite size pieces and frozen them. No blanching required. Then I can grab a handful and throw into stirfries, soups, roasts etc during the winter months. To roast this adds a delicious garlic dimension to the flavor of the gravies. To stir fries, the scapes crisp up, giving a super crunch to the dish. Soups of course, always benefit from that mild garlic taste! I also dehydrate the scapes and leave in pieces to add to my cooking or then powder to use as seasonings. Either way you choose to use them will bring an added dimension to your cooking! Enjoy

Eggs will be delivered to Aroma Foods and Green Tree Health and Wellness tomorrow morning. Sorry for the delay. You will notice that there are still cartons with small eggs. When new laying hens begin to lay (we have 150) they begin with small eggs and they become larger with time. There are still some hens that are beginning to lay. Late bloomers we call them! This will improve over time. The eggs may be small but they are still packed with free range nutrition!

We had a beautiful heifer calf born on the 30th of December in -23. This was totally unexpected. We brought her into our basement and our daughter, Jessica Wall, nursed her for several hours to get her circulation flowing. Our son's girlfriend, Laura Spyker continuously heated and re-heated rice bags that we packed all around the little girl. We rubbed diesel on her ears to save from frost bite. We kept her in the house, tucked by our wood furnace and bottle fed and took her ...to her mom when the sun was out. Fortunately Mom had no trouble taking her baby when we would return her. We named her the little heifer Francey. These are the latest pictures we have of her. She is doing remarkably well thanks to the care of the girls. When the cold weather returned yesterday, we brought her back in for the night and we will do again tonight. Sometimes we are there to catch her peeing, and grab an ice cream bucket, holding it under her until she is done. Most times, we miss it and have a mess to clean up! But hey, this is farming!!!
