This past year was certainly a year of unknowns when it came to understanding how to operate farmers markets under these unprecedented circumstances, implementing never before required guidelines and navigating the many obstacles that were thrown our way. Fortunately, we were all in it together! Through teamwork and with determination, we learned a lot and pulled through the season really well, all things considered. We asked Artisan vendor, Katerina Klimes, to tell us about herself and her business. Here's what she had to say: I am a Confident Chameleon! I was born in Prague, under the communist hammer. At the age of 7 we took a holiday, and escaped under the watchful eye of semi-automatics over the Yugoslavian border. We spent a few months in a true refugee camp, and a year and a half in refugee housing. We learned German and started anew. I saw my father after 2 years, when he was re...leased by the communists. We got into Canada because my amazing Babi sponsored us in 1984: we started anew again. We spent the next few years being dirt poor, while my parents learned the language... Here's a simple Carrot Coconut Soup Recipe to help keep you warm! Perfect comfort food for the times! 2 tbsp coconut oil 3 tbsp fresh minced ginger... 4 cups vegetable broth 10 medium carrots, peeled and chopped 1 can (16) oz coconut milk fresh cilantro Heat oil in a large saucepan over medium heat. Add ginger and sauté for 2 minutes. Add vegetable broth and carrots. Cook over medium heat until carrots are tender. Add coconut milk. Puree all ingredients in a blender until smooth. This Nov. 18 event is titled "Climate Friendly Livestock Farming Virtual Field Day"... Beaver Meadow Farms is a third generation farm that has been operated by the Smith family for over 80 years. They use a natural system of farming which has earned the farm the Certified Organic Producer (#03-16-198). The farm is now also SPCA Certified, and certified Salmon Safe.
