Ah, the first snowfall of the year As synonymous as comfy sweaters, and hot apple cider or cozy blankets and warm fires... What could feel better than a soul warming bowl of confit duck leg, roasted pork belly and house made game bird sausage cooked in hearty white beans and duck stock topped with a duck skin crumble. This is hands down the first meal we think about having on days like today, and it only takes 15 minutes for you to reheat in the comfort and warmth of your own home.

Poached pear preserve. The adult version of apple sauce. Like eating a poached pear dessert, but right of a jar! Niagara on the Lake pears cooked down with vanilla bean, warm spices, and loads of local red wine. This conserve is the perfect accompaniment to a charcuterie board, especially one that finds itself having blue cheese, prosciutto, and walnuts aboard, a glass of red wine wouldn’t hurt either. ... Happy Remembrance Day. This photo is my grandfather at 22 before being shipped off to war, and underneath is the letter he sent to my grandmother while at war; To my wife A few lines darling, I want to write,... Of what you mean to me in this weary fight, Of the courage you give me to carry on, And the love that awaits me when it is done, You have proved you are honest, sincere and true, Lovable, kind and affectionate too, These things darlings are not thrown away, When a guy boards a ship and sails away. And remember daring when we were there at the train, The wind in your hair and your face licked by rain, I saw a tear welling up in your eye. This was our first attempt at a goodbye. As I lie in my bunk and look to your face, I pray to god that nothing will erase, The love that was ours when I went To help end an evil the devil has sent. Sorry for the long post, but when my aunt sent me this today, it really cut deep, and made me take a step back and picture leaving your loved ones and family behind to fight a war you did not start. I Hope everyone takes time to remember.

First of the season is a pheasant, confit duck and pork belly terrine, with cranberries and walnuts, perfect for the holiday’s.
