This dish is so tasty & beautiful we feel the need to post another photo of it this week but this time the half portion. This is an example of what we mean by half portions on our menu. These portions allow for you to choose basically anything on our menu as either a full or half sized meal as your entree (for lighter eaters) as well as allowing you the option to choose anything from our entire menu as a starter (breaking free from the standard soup/salad fare small past...as and fishes are extremely popular choices). The other wonderful thing of our 1/2 size option is that it allows those people vacillating between two choices to try both!!! Can’t decide between the mussels or the lamb chops? Why not have both by choosing a 1/2 plate each (mussels for a starter and lamb for main, for example). This option also allows those people who live for variety (and to try as many tasty dishes as possible) to create their own three or four course ‘tasting menu’. Many couples will share as many as six (or more!) 1/2 options so as to try ALL THE FLAVOURS (meme reference ) from our ever-changing, seasonally based menu as possible. See more

Funny how a little snow makes the same things look like they’re from some other place in the world. Where would you imagine you’d find us on the globe today?

Love is in the air this weekend and our Libations Director Mel () has created the perfect beverage to commemorate the festivities! We aren’t sure what’s in those heart shaped gummies she made to accent this perfect love potion (and it might be only psychological) but the staff who tried them seemed extra convivial afterwards. We might have to start making them eat one every shift...

Check out this bright idea! Did you know you can make yourself a ‘Dine Around Style’ 3-course menu ALL YEAR LONG by choosing from most of our half plate options from the regular menu and still stay under $40?!?! For example, you could start with a 1/2 portion of our famous Butter Lettuce Salad (or Chef’s beautiful seasonal soup perhaps?), have a main course of one of our 1/2 plates of local fresh fish, pasta or savoury meat dishes and finish with any one of our beautiful house-made desserts! These are just some of the ways you can enjoy Brio dining while trying more than one item AND not break the bank! We think you’ll find it quite ‘illuminating’...

Handmade Ricotta Cavatelli sound good to you? How about with a mascarpone cream, Savoy cabbage, crisp fresh apple and a dusting of sage breadcrumbs? Thought so...

Under our Libations Engineer Mel, we have revamped our House Cocktail List! Meet The Secret Garden! What’s in it? Don’t know ‘cuz it’s a secret (obviously) and besides that if we do we’d have to kill you. Just kidding... It’s Gin, elderflower, fresh squeezed lemon, grapefruit and fresh cucumber! It’s so dangerously refreshing you’ll be tempted to refresh yourself into a taxi as you’ll definitely want more than one!

Have you ever seen an entire night of service go by in 48 seconds? If you watch this you will and see a happy dance at the end with two servers and a cook! Don’t get the wrong idea, we LOVE what we do but it’s always nice to see another wonderful night wind down and everyone get to go home to their cozy pants and Netflix.

Roast pork loin, potato gnocchi, roast apple & carrot, fresh organic greens, perigord sauce (with black truffle). To paraphrase Farmer Hoggett, That’ll do, for this pig. Yum...

At times it actually feels like these guys DO move this fast back there in that kitchen in order to get your deeeee-licious Brio goods onto your table. It’s an unchoreographed improve ballet, of sorts, made up of skilled dancers who somehow know their steps regardless of the music. There’s so much skill back there (and in so many deserving kitchens in our small city). We sure are lucky in this neck of the woods. Music: Da Funk Musician: Not The King.

It’s autumn. You know what that means? Apples! Did you know there are 15 types of apples that grow on Vancouver island alone? What’s your favourite? Whatever type it is, if you like apples then you’ll love this new fall inspired sweet: Caramelized Apple Terrine, Green Apple Bavarois, Apple & Lime Sorbet (with a bed of fresh apple slivers) and a drizzle of apple caramel. Hungry for apples yet?
