Cake nest 15.01.2021

Birthday donuts September is the busiest month for birthdays in our family. I made these chocolate cake donuts for my twin niece and nephew’s birthday party yesterday! Does anyone else feel like September is birthday month?

My nephew Jayden just turned 10! I can’t believe it! I still remember the cake I made for his first birthday. At that time I had just started baking, and looking back at the cakes I made 10 years ago always reminds me of how far I’ve come as a baker since then. Jayden loves Snickers, so I made him a Snickers cake. There are six layers of chocolate cake separated by salted peanuts, caramel, Snickers pieces and chocolate ganache. I also covered the entire cake with ganache. ... I’d have to say I prefer ganache over buttercream, but that’s because I LOVE chocolate. Are you more of a chocolate ganache or buttercream person? I would love to know.

Strawberry shortcake It doesn’t get much more summer than this! I made this cake for a friends hang out yesterday. I used a super soft and fluffy sponge cake, whipped cream and fresh strawberries. I realized afterwards that the sponge cake is not the best for stacking. I guess you never stop learning. Oh and the super cute cake stand was thrifted from @superthriftpembinavalley Have a great weekend folks!!

Last weekend was my sister’s wedding and they requested a cheesecake as their wedding cake. I don’t usually make wedding cakes out of cheesecake, but I decided to give it a shot. The hardest part was figuring out how to stack 5 tiers of soft, heavy cake on top each other without anything sliding or collapsing. That’s where my craftsman husband came in. He built me a cake base with a dowel that goes all the way through the 5 tiers and into the base. I also used thicker cake boards for each tier than normal and dowels separating each tier. The cake held up all day, including several hours sitting in the heat. It’s not something I would do regularly but overall it was a unique and beautiful cake for an equally unique and beautiful couple. @ Morden, Manitoba
