Medovik or Honey cake is a layer cake that I love very much. It is very popular in my home country as well in all the countries of the former Soviet Union. Who knows what I am talking about, should remember it from childhood, isn’t it? But this cake that I display, is healthy one - low on calories sugar free, gluten free, but with all the taste.... As always, I list the main ingredients: baking blend gluten free, organic honey, organic eggs, cream, vanilla yogurt, sweeteners. Here is the short story of Honey Cake: The cake was created in the 19th century in the Russian Empire by young chef who sought to impress Empress Elizabeth Alexeievna, wife of Alexander I. Empress Elizabeth couldn’t stand honey, and any dish made with it drove her mad. One day, however, a young new confectioner in the Imperial kitchen didn’t know the Empress' dislike, and he baked a new cake with honey and thick sour cream . Surprisingly, and unaware of the honey content, Empress Elizabeth immediately fell in love with it (Wikipedia). Such lovely story. The cake is not too sweet, but next time I will make it with some layers of berries. I think it adds a bit of gentle sourness and lovely light texture (at the same time -reduce calories more)! The cake should be stored in an airtight container and should be fine for up to 1 week. The cake also freezes well . See more
