Nose to tail is complicated. One of the most difficult tasks I manage is how to sell all of the cuts found in a carcass. Unlike most butcher shops, that only bu...y the cuts they want to sell (usually from the likes of Cargill), I have to sell everything - nose to tail. Selling each cut is not the problem, it's selling all of the cuts at the same rate so we don't end up with a freezer full of those that sell more slowly. It's a balancing act that takes hours of my time every week. If we have a cut that's selling more slowly, like beef short ribs, I have to think about how we can cut it differently to offer our customers another option to hopefully increase sales. My ingenuity this week was to offer some big beefy short ribs to smoke or BBQ. We call them Beef Dino Bones because when I saw them I thought of the Flintstones.
