Bush Pies Unless otherwise noted, all of these recipes require bread, buttered on the outside. And, of course, they all require a bush pie maker. Philly Cheeses...teak Bush Pies: Slice bell peppers, onions and leftover steak thinly and stack on one side of a pie iron. Add a good amount of cheese on top - cheddar is fine, but Swiss is divine. Close up the pie iron and stick it in the fire until everything is golden brown! Breakfast Bush Pies: Crack an egg into one side of a bush pie maker. Sprinkle with cheese, chopped up bacon or ham, some green onions and salt and pepper. Close and cook. Don't flip the pie iron over until you've let it cook on one side for a bit first, so that your egg has set. Pizza Bush Pies: You can use bread for this one, but you can also try using refrigerator pizza dough, cut to size. Fill it up with sauce, cheese and whatever toppings you like on pizza: ham and pineapple, pepperoni and mushroom, bbq chicken and red onions... whatever your heart desires! BAT Bush Pies: Like a BLT, but we replace the lettuce (because it would get soggy) with delicious slices of avocado. A mix of Parmesan and mozzarella for cheese is particularly delicious with this. Apple Pie Bush Pies: Bread works here, but you can also use some refrigerator pie crust. Slice apples thinly, coat with cinnamon, sugar and a pinch of nutmeg. Pile them into one side of the pie iron, and then add in a small pat of butter and a squirt of lemon juice. Close and cook until golden. Peanut Butter Banana Bush Pies: The name says it all. Slice your bananas thin, so that they're easy to bite into. Try sprinkling in a few chocolate chips with this one. Banana Split Bush Pies: TOTALLY decadent! Fill your bush pie with sliced bananas, pieces of a Caramilk chocolate bar and some strawberry jam. Close it and cook until it's golden brown. Then, make sure you serve it with ice cream to complete the banana split flavour. Cherry Pie Bush Pies: Just like the apple ones, you can use either bread or refrigerator pie crust. Fill your pie with cherry pie filling (store-bought is just fine). The trick with this one, if you want a nice crunch to go with it, is to add in some toasted, slivered almonds before you close it up to bake.
