If you've never had Sugo Alla Genovese, you're in for a treat! We have added this exquisite, elaborate sauce to our already impressive sauce lineup. A little history on Genovese: Genovese sauce is a rich, onion-based pasta sauce from the region of Campania, Italy. Likely introduced to Naples, from the northern Italian city of Genova,during the Reinassance, it has since become famous in Campania and forgotten elsewhere. The sauce is unusual for the long preparation time used t...o soften and flavor the onions. When it comes to Italian food here at Capri we use traditional, centuries old recipes, you can taste the authenticity and love in each one of our dishes. Made by browning beef chuck, then adding lots of onions, celery, carrots, a hint of tomato, white wine and lots of patience and love. The result is a sweet, rich sauce with tender chuks of beef that melt in your mouth. Traditionally served with ziti and Pecorino Romano but we didn't have any ziti, so we used penne. Did you know that all our pasta is "trafilata al bronzo"? It means that our pasta is extruded through bronze dies and not laminated teflon molds. What difference does it make? Well, laminated teflon molds give the pasta a smooth, slippery surface, so the sauce just slides off the pasta, while extrusion through bronze dies, creates micro lesions on the pasta, giving it a rough, porous texture which helps it absord and retain sauces. Therefore bronze die extruded pasta has superior texture and flavor! Give your taste buds a superior experience by eating some of the best pasta you'll ever try around here! Had some leftover ricotta filling from the zucchini blossoms. Thawed one of our incredible pizza doughs and made calzoni fritti! Not sure how many of you know that zucchini flowers are super tasty and are considered very valuable by us Italians. We actually plant zucchini not for the zucchini, but for the flowers.
