As a fan of the Pirates of the Caribbean when I saw this joke it inspired this week's feature. 'a slice of apple pie in Jamaica is $2.00. It is $2.50 in the Bahamas. These are the Pie Rates of the Caribbean' Laughed so hard but seriously, all joking aside, get this week's feature! If not for yourself, a treat for someone who needs a little cheer. And in these gray days of early spring, everyone can use some random kindness.

It can feel like food sometimes is our enemy... counting calories, carbs, fat. Where does it end? That was me and when food started to make me sick, well, you can imagine the love/hate relationship became all the more strained. The solution I found? Eat for health, eat in moderation. That meant finding creative solutions to replace my favourites and soon those became new faves. I associate feelings with food and vice versa. You too? Maybe that's the foodie in me and when I was diagnosed Celiac, naturally a depression set in at ALL the things that were now off limits. BUT that did not stop me. After my pity party, I got to work and began to experiment with GF flours, texture, taste and after a long process developed my own flour mixture, which is available for sale AND I could make again my favourites and in some cases the new flour actually enhanced the mouth-feel. HALLELUJAH! This week I wanted to celebrate small milestones... cookies, a simple treat but linked so indelibly with joy.

Pull out those family favourites, those recipes that Grandma used to make and fill your place with the smells of better days. My Grandma made the best molasses sugar cookies and I've made them with my GF AP flour mixture, not the same obviously, but the memories it brought to mind...priceless. So here are some staples to go with that stew, that favourite Indian comfort food, the pie that just makes your mouth water. It's time to recreate your own moment.
