Roasted Butterflied Garlic Chicken There is nothing more tasty and economical than a whole chicken but it can pose some challenges when cooking on the BBQ. There is a way to make this family favourite cook evenly on the BBQ and work well for your camping trip. First, you can make several in advance in your favourite marinades and second, lay them flat and stack them conveniently in the fridge or freezer. Beer can chicken just can't compare. Butterflying a chicken so that i...t lays flat on the BBQ and the meat cooks consistently are much easier than you think. Grab a good pair of kitchen scissors or a sharp knife. Place the chicken breast side down on a cutting board or plate so that the back is facing you. Cut along both sides of the backbone severing through the ribs and remove the backbone completely. It's good for soup or stock. Once removed, turn the chicken over and crack the breastbone with a knife until the chicken lays flat. There are helpful videos on Utube if this is your first time. Now it's ready for marinating and freezing in a large Ziplock bag. Here is a flavorful marinade that will make a little work in advance worth the while on your trip. Marinate overnight in the refrigerator before freezing. 1 whole chicken (try for around 3-4 lbs) 4 tbsp sesame oil 4 tbsp soy sauce 1/4 cup rice vinegar 1/4 vegetable oil 3 tsp of Chinese Five star powder 12 crush garlic cloves or 3 tbsp of garlic paste 2 tbsp salt 1/4 cup of cilantro (coriander) paste 1 tsp dried red chili flakes, paste, or one finely chopped fresh red chili with seeds 1 to 2 lime for garnish This recipe will marinate one chicken. Cook on the BBQ or in the oven at 350 in a roasting pan about an hour until cooked.
