Nutella Puff Pastry Snowflake Ingredients 2 sheets puff pastry thawed and cut into 9-inch rounds 1/2 c. Nutella... Zest of a large orange 1 egg lightly beaten 2 tbsp. powdered sugar for dusting (optional) Instructions Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Place the first round of puff pastry onto the parchment lined baking sheet. Using an offset spatula, spread the Nutella over top, leaving a 1/4-inch rim around the outside uncovered. Zest the orange over top. Place the second round of puff pastry over top, press gently to seal. Mark the center of the circle. Using a pastry wheel or pizza cutter, cut the circle into fourths, leaving about a half inch of uncut dough in the center. Continue by cutting the fourths into eighths, then the eighths into sixteenths. You should have sixteen sections. Grab two sections and twist them away from each other three times, then press the two ends together to make a point. Repeat until you have 8 points or "arms." Brush the snowflake with a light coat of egg wash, then place in the oven and bake for 30-35 minutes or until golden brown and fully baked. Grand Marnier... 9 oz. silver tequila 1/2 cup lime juice 3 tablespoons agave syrup garnish: fresh or frozen cranberries, lime slices, and rosemary sprigs To a large pitcher add full-fat coconut milk, coconut water, Grand Marnier, silver tequila, lime juice, and agave syrup. Using a whisk stir everything together until coconut milk no longer separates. Serve over ice. Garnish with fresh cranberries, lime slices, and rosemary sprig.

Thai Pumpkin and Coconut Soup 1 tablespoon vegetable oil 1 medium onion, chopped 2.5 lb butternut squash, or butternut pumpkin as some call it, peeled, chopped... .25 lb white baby potatoes, peeled, chopped 2 garlic cloves, crushed 1/4 cup Thai red curry paste or curry powder 2 1/2 cups chicken stock 400 ml can coconut milk 2 tablespoons unsalted roasted peanuts, finely chopped 2 tablespoons fresh coriander leaves, chopped 1 tbsp chives or green onion, finely chopped 2 teaspoons lime juice Heat oil in a saucepan at medium-high heat. Cook onion, for 5 minutes or until softened, make sure to stir occasionally. Add pumpkin and the potato to the pan and cook for about 5 minutes, stirring occasionally. Add the garlic. and still cook, stirring for 1 minute or until fragrant. Add the curry paste to pan and cook, stirring for about 2 minutes and the vegetables are coated all over. Add the stock, stirring to combine. Cover and then bring to the boil. Reduce heat to low and simmer for about 15 minutes. Remove the lid and allow the mixture to simmer for a 20-25 minutes longer, or until the vegetables are tender. Remove from heat. Stand for 5 minutes. Blend soup until smooth using a stick blender then return to medium heat and stir in 1 cup coconut milk. Season with pepper. Cook, stirring occasionally for 5 to 6 minutes or until heated through. While soup cooks, combine peanuts, coriander, green onion and lime juice in a small bowl. Loaded Black Bean Nachos INGREDIENTS 1 tablespoon olive oil 1/2 medium red onion, diced... 2 cloves garlic, minced 1 teaspoon ground cumin 1/2 teaspoon chili powder 1/2 teaspoon kosher salt 2 (15-ounce) cans black beans, drained and rinsed 1/2 cup water 1 (8-ounce) bag tortilla chips, divided 2 cup grated cheddar cheese or Monterey Jack cheese (about 8 ounces), divided 1 cup salsa 3 green onions, greens part only, thinly sliced, divided 1/2 cup pickled jalapeños (optional) 1 cup plain Greek yogurt 1 cup guacamole Arrange a rack in the middle of the oven and heat to 400F. Heat the oil in a large saucepan over medium heat until shimmering. Add the onion, garlic, cumin, chili powder, and salt. Stir to coat with the oil, and cook, stirring occasionally until soft, about 5 minutes. Meanwhile, mash the beans in a large bowl with a fork, keeping them a little chunky. Stir the beans and water into the saucepan. Cook, stirring occasionally until the mixture is thickened, about 5 minutes. Remove from the heat. Spread half of the tortilla chips in a single layer on a rimmed baking sheet. Dollop half of the bean mixture evenly over the chips and sprinkle with half of the cheese. Top with half of salsa and half of the green onions. Repeat the layers with the remaining tortilla chips, black bean mixture, cheese, and salsa, but do not top with the remaining green onions. Bake until the cheese is melted and bubbling about 5 minutes. Top with the remaining scallions, pickled jalapeños (if using), yogurt, and guacamole. Serve immediately.
