After butchering a whole duck, I always make sure to use up all the bones and fat as well; slowly rendering on the stove. I keep the fat for deep drying or confit. I use the stock to make duck jelly, which is pretty much a glace de viande method(slowly reduced stock). This is why i call it liquid gold : 1) It takes a long time to make, but worth it. 2) Extremely flavorful. 3) Longer shelflife than a regular stock.... Duck Fat/Jelly INSTRUCTIONS: Throw everything in a pot (duck bones, fat and any other scraps) with mirepoix(onions,carrots, celery), peppercorn, bay leaves and fill with water until covered. Bring to a boil and down to a simmer for about 1 to 2 hrs skimming any scum that rises on top. Take off the heat and strain. Discard veg, spices, bones etc...return stock on stovetop and slowly reduce on a simmer until 1L or 750ml is left in the pot. Place in a container to cool down. Leave in fridge overnight. You'll have the fat separated on top (place in a different container) and that gold jelly on the bottom, great in sauces or soups. *that sizzling* Did you know that it takes at least 3 to 5 days to prepare a perfect Duck confit? Ducks Legs are the main part used for this traditionnal French dish. They get cured in a salt mixture with seasonings for 24 to 72hrs. Wiped off & pat dried. Glazed Ham steak ready in less than 20 mins using butter, brown sugar, soy sauce & chili flakes. You don't always need 2 hours to prepare a great & delicious meal Sear steak on both sides. Set aside. Add butter to the pan until melted. Add chili flakes, brown sugar & soy sauce.... Keep stirring your glaze until sugar is fully melted, then add steak and cook for another 10 mins. Done!
