I was working on a small batch today with a slightly different ingredient ratio than usual as I was incorporating a new flour. This is where the fun, challenge and sometimes frustration come. When we recipe test, we diligently record the measurements of each ingredient, resting or rising time, bake time, air temperature and humidity (bread for example does WAY different things in Ottawa Valley summers than it goes in the winter haha!) and more. We test and change variables each time until we get what we’re looking for. And then THAT is the recipe we use. I’m not totally happy with this go (although it will still taste delightful!). Back to the test kitchen we go!

2020 has been awful for food businesses and suppliers are without question in the same boat. I just ordered the Christmas Crunch Special - 5 bags of your choice of flavours. Since we’re back in the throes of lockdown, we’ve recommitted to supporting our local food spots for takeout as much as possible! Yesterday, I grabbed the oh-so-fabulous beet salad from @harvest_social (I needed some veggies after too many days of too many carbs ) Tonight we grabbed charcuterie, Bryan’s favourite sandwich and some Hill 70 from our friends over at @4degreesbrewing and all of it conveniently available for pickup at @bowiessmithsfalls ... Grab some NYE goodies over at Bowie’s - Pat or Lee will get you adequately stocked up!

A couple of our IG followers guessed right! The beginnings of candied ginger is what was in the pot and it’s now drying in some sugar. Great finely chopped and added to cookies or in apple crumble topping, in granola and the leftover syrup is a great addition to lemonade or cocktails (hint hint )

Not bakery related (well, I guess it kind of is). 2020 has been a wee bit of a roller coaster and one thing that’s gone by the wayside for SO many of us is self-care - of any sort. Stress is sky-high, you never know when things will change or how they’ll change. There’s a constant little worry in the back of your mind, yeah? If you’re like me you may have found yourself exhausted with the mental and emotional gymnastics to figure out how what to do and when you can do i...t; when you could go to the grocery store (if you felt brave enough); and where on God’s green earth you were going to find toilet paper before you ran out (I mean, seriously people - toilet paper!!!). Anyhow, you may also have found yourself engaging in zero, nada, zilch exercise or healthy habits - maybe? Yes? Yeah, right over here Trigger vicious cycle of not exercising, grabbing takeout (which I will still do to support our local restos!), crappy sleep (thanks stress ) and feeling more and more tired. And THEN - those pesky gremlins go and shrink all my pants!!!! WTF?! So here we are - this is my new after-work space. It’s a spare bedroom that needs paint and moulding and new lights. But I committed last week to rolling out my yoga mat and moved in my state of the art rowing machine. Why? Because I know I need to be better to myself as we shift into what is surely going to be a challenging and frustrating fall and winter. And my bakery and baking and cooking for all of you soothe my soul and it’s something that I find peace in during these crazy times. So there you go - my public commitment to be better to myself so I can do what I love without interruption (). Here’s what I’ve incorporated daily - meditation in the morning, more water, vitamins (thank you @modernthymesbulkfoods for stocking me up!) and then yoga, rowing or @tracyandersonmethod when I get home. Oh! And less screen time and more book reading. What are you doing to stay grounded and relieve stress and stay healthy as we head into fall and winter? Share away!
