Hello friends! Several people have reached out to me asking to share some of my recipes during this self-isolation period - I'm glad to help. Here is one of my all-time favorites.... Stay inside, stay safe and enjoy something wickedly decadent! Dylan ____ Malva Pudding Madness by Dylan Ellis (from the book South African Decadence) Amarula Cream Syrup Base: 1 cup brown sugar 125g butter 2/3 cup heavy cream 2/3 cup milk 2/3 cup Amarula Method: In a medium-size saucepan bring ingredients up to a boil and then simmer for 15min stirring at regular intervals. Malva Cake base: For best use of this recipe, set up your mise en place into 4 bowls as per Parts A to D. Part A: 2 cups of granulated sugar 4 TBS apricot jam Part B 125ml soft butter 4 eggs Part C: 1/3 cup milk 1/3 cup heavy cream 1 TBS apple cider vinegar 2 TBS Amarula Part D: 2 cups all-purpose flour 2 TBS bicarbonate soda 1 TBS baking powder 1/4 tsp salt Method: 1. Preheat the oven at 350f (180c) 2. In a blender, combine Part A for 2 minutes, until an orange paste. 3. Add Part B to Part A in the same blender and combine thoroughly. 4. Add Part C to the same blender mixture and combine for 3 minutes. Your wet ingredients should now be a well-mixed batter. 5. In a stainless steel bowl sift part D rigorously 5 times. Your dry ingredients should now be ready. 6. In small batches, add wet to dry ingredients and fold with a rubber spatula until a thick cake batter has formed. 7. Grease dish or tray. 8. Bake for 45 to 50 minutes. The cake should be golden brown. 9. Once cooked, using a toothpick. Poke 10 spread out holes in cake. 10. Evenly pour Amarula cream syrup over the cake. Once it's all soaked in, serve with custard or ice cream. Plating tips: I wanted to convey two elements by way of unspoken storytelling by using shapes and designs inspired by Africa. I used a cookie cutter to cut interesting shapes out of the pudding and I have plated the custard using a liquid dropper and a toothpick to draw in the feathers. About Malva Pudding: One of the dessert identities of South Africa, Malva Pudding a prominent feature of my childhood. Every celebration I can remember Mulva Pudding was there. A sticky apricot sponge style cake with some sort of flavor kick, be it brandy, Amarula, vanilla cardamon or a host of others. Those who follow my recipe pages will surely have noticed that I have a lot of Amarula recipes. if you are new to my work and wondering why it's simple.
