This no cook Tomato sauce with zucchini noodles is an all-time favorite from my clients ...I think it’s easy to make and it is definitely delicious, satiating and filling. Time for an all time amazing zucchini noodles dish! You could do it with cucumbers as well , but please remember to let them sit and dry. The cucumbers are very high in water and dressing and all will go into running mode. It becomes very liquid. You can peel or not peel. And if you don`t have a spiraliz...er you can use a potato peeler and make wider pasta looking strings. Get creative. Use a spiralizer and make noodles from a large zucchini or two smaller ones. The amount is optional. Add chopped small tomatoes, cucumber, peppers in all colors. Top with chopped arugula and parsley. Make the Tomato Dressing below. Dressing: 4 Large ripe Roma tomatoes, cup sundried tomatoes with no oil or salt, 1 red pepper, 1 clove of garlic, 1 stalk of celery, cup fresh basil, 1 teaspoon dried oregano, 2 pitted dates, 1 tablespoon of lemon juice. Store whatever you do not eat in the fridge in a tight glass jar. It should keep for 3 days.
