Chilli is a wonderfully filling and satisfying meal for autumn. Try this recipe from Cooking Classy for a hearty fall meal. INGREDIENTS 1 Tbsp olive oil 2 lbs lean ground beef... 1 large yellow onion, finely chopped 3 cloves garlic, finely minced 2 (14.5 oz) cans diced tomatoes with green chilies* 3 (8 oz) cans tomato sauce 1/2 cup beef broth 2 Tbsp chili powder 2 1/2 tsp ground cumin 2 tsp paprika 2 tsp unsweetened cocoa powder 1 tsp granulated sugar 1/2 tsp ground coriander Salt and freshly ground black pepper 1 (15 oz) can dark red kidney beans, drained and rinsed 1 (15 oz) can light red kidney beans, drained and rinsed Shredded cheddar cheese for serving DIRECTIONS Heat olive oil in a large and deep non-stick skillet over medium-high heat. Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker. Return skillet to medium-high heat, add beef and cook stirring occasionally until beef has browned. Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavour but you can drain it all if you'd prefer). Pour browned beef into slow cooker. Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste. Cover with lid and cook on low heat for 5 - 6 hours. Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.

Macaroni and cheese is the ultimate cozy fall dish. Here’s a 5 recipe from The Chunky Chef that you need to try! INGREDIENTS 1 lb. dried elbow pasta 1/2 cup unsalted butter... 1/2 cup all-purpose flour 1 1/2 cups whole milk 2 1/2 cups half and half 4 cups grated medium sharp cheddar cheese - divided (measured after grating) 2 cups grated Gruyere cheese - divided (measured after grating) 1/2 Tbsp. salt 1/2 tsp. black pepper 1/4 tsp. paprika DIRECTIONS -Preheat oven to 325 degrees F and grease a 3 qt baking dish. -Add dried pasta to boiling water and cook 1 minute less than the package directs for al dente. Drain and drizzle with a little bit of olive oil to keep from sticking. -Divide grated cheese into three piles. Approximately 3 cups for the sauce, 1 1/2 cups for the inner layer, and 1 1/2 cups for the topping. -Melt butter in a large saucepan Sprinkle in flour and whisk to combine. Cook for approximately 1 minute, whisking often. Slowly pour in about 2 cups of the milk/half and half, while whisking constantly, until smooth. Slowly pour in the remaining milk/half and half, while whisking constantly, until combined and smooth. Continue to whisk and cook until thickened -Remove from the heat and stir in spices and cheese. Stir until completely melted and smooth. -In a large mixing bowl, combine drained pasta with cheese sauce, stirring to combine fully. Pour half of the pasta mixture into the prepared baking dish. Top with 1 1/2 cups of grated cheeses, then top that with the remaining pasta mixture. -Sprinkle the top with the last 1 1/2 cups of cheese and bake for 15 minutes, until cheesy is bubbly and lightly golden brown.
