For my Christmas in November Zoom workshop, a little treat bag of Caramel Popcorn was put into each stampers project package. A few stampers requested the recipe, so here it is: Caramel Popcorn 12 Cups Popped Popcorn... 1/2 Cup Butter or Margarine 1 Cup Packed Brown Sugar 1/2 Cup Dark or Light Corn Syrup 1/2 tsp. Salt 1/2 tsp. Baking Soda 1/2 tsp. Vanilla Place popped popcorn into roaster or on parchment-lined baking sheet. In a saucepan, combine butter, brown sugar, corn syrup and salt. Bring to a boil then reduce heat to medium and cook for 5 minutes, without stirring. After 5 minutes, remove from heat and add baking soda and vanilla; stir to combine. Pour hot mixture over popcorn and toss to combine. Bake in 250F oven for about 1 hour, stirring every 15-20 minutes. Remove from oven and let cool. Break into pieces. Store in airtight container. Enjoy!
