Roasted Veggie Bowl with homemade pickled red onion, pumpkin seeds, sun-dried tomatoes and sauerkraut this was a delicious Sunday Brunch meal.

Buddha Bowl tonight for dinner!! Organic Brown rice, falafel, broccoli, red cabbage, carrots, green onions, mushrooms,cilantro and Thai peanut sauce.
Roasted Cauliflower Soup, and the Thai Peanut Sauce for one of the Bowl recipes.
Here is my food prep for: Roasted Turmeric Cauliflower Soup and Plant Based Buddha Bowls for the next 3 days for lunch and dinner.
Bowl#1: Quinoa, Greek Salad (no dairy) Today is meal prep day for me. Watch for my next post on the fresh chopped vegetables I am prepping for my meals this week!
