Labour Day brunch at home dish: Baked Croissant French Toast! Literally took ten minutes but felt like a much more impressive dish. How to: Take a few croissants cut in half lengthwise, dip in custard mix of eggs, cinnamon, milk (I used oat milk), and vanilla. Arrange in a row, bake for 10-15 minutes at 350 degrees F. Top with fruit and powdered sugar. Best paired with coffee and some vanilla yogurt or whipped cream! Hope you’re all having a relaxing day, wherever you are.

I never thought there would come a day when I would be getting groceries (first time using @instacart) to participate in a cooking class with my co-workers, all without leaving my apartment! Very fun team building activity led by Chef @paullillakas today. The recipe: Sweet Potato Stacks with chipotle mayo from scratch, crispy onions and scallions. At first glance, @talormade might just look like the most Instagrammable coffee and doughnut shop you’ve ever seen (which it is). But once you taste the coffee, you realize they’re not messing around - this place is quality! The short story is that of Australian Talor Browne (shout out to a good name pun) who trained all around the world as a barista under some of the best in the business, including @timwendelboe. She eventually found herself in Norway, and decided to create... a business that would serve speciality coffee and products without any pretentious attitude. The impressive story is longer than that, but you get the idea! The doughnuts here are delicious, and come in flavours like Raspberry Pistachio, Daim (one of my fave chocolate bars), and Ice Cream (you see that chocolate sundae in the photo? There’s a doughnut in there!). There are now two @talormade shops in Oslo and extra Coronavirus measures being put into place as of today. A far cry from gourmet farm-to-table but just as important to Norwegian culture: the humble gas station #pølse (hot dog). With food in Norway being hella expensive (not to mention most things being closed on Sundays!), gas stations have become the lifeblood of, and an important social hub for many small communities. If you’re ever on the road in Norway and can’t find any decent restaurants, you can always count on a gas station for pretty high quality fast food. @vanhaarfagre... tells me the top two contenders for pølse these days are @shell (more contemporary) and @circleknorge (more traditional, like the ones pictured with shrimp salad and potato bacon salad on top). If you look carefully, you will also see that the dogs are both wrapped in bacon! This epic #NorwegianRoadTrip has now come to an end. Thank you @upnorway for coming up with such a perfect itinerary. Svein Ringheim, one of the proprietors of @storeringheimhotell, told us that more people on the rainy West Coast of Norway have permanent outdoor seating than the relatively drier East Coast. The theory? If the sun ever shines, they must take advantage of it immediately! We certainly took advantage of the sunny weather as well. After a full-day of driving and rafting in @visitvoss, there was no better setting we could have asked for to enjoy our hearty elk burgers than in th...e Store Ringheim garden. Add a slow and gentle sunset, a babbling pond, the distant sound of farm animals, and some wine and local craft beer to pair with it all.
