Pourover coffee starts with (freshly) ground coffee, a filter, and usually a filter holder, often called a 'pourover dripper.' In our case we have our compostable and recyclable x-wing technology...but more about that later! All coffee brewing methods involve the same three general phases: wetting, dissolution, and diffusion. Each phase is linked to the others, and they affect what comes next in some important ways. ... Pourover coffee continuously replenishes the liquid surrounding the coffee grounds with new, fresher water. This promotes a faster, more efficient brew. Wetting One of the major byproducts of roasting coffee is carbon dioxide gas. When you hit the coffee grounds with hot water, CO2 is able to escape and it bubbles out. As you start your pourover brew, you'll want to add just enough brewing water to wet all of the grounds, then it's good to stop and let the gas escape for about 30 seconds or so. You'll see the bed of grounds swell and expand, resulting in what coffee professionals call a "bloom." Dissolution Once the coffee grinds are fully wetted, the hot water will dissolve the solubles (also called solutes) in the beans' cells. One of the convenient facts of coffee chemistry are that the desirable and tasty solubles dissolve in water more readily than the unpleasant-tasting substances, so getting a tasty brew is all about stopping the brewing at the perfect momentafter you've dissolved the good flavors but before those nasty flavors start to dominate. Diffusion Diffusion is about taking that dissolved stuff and transporting it out of the coffee grounds via that term you might not have heard since school: osmosis. The cell wall structures of our coffee grounds are semi-permeable membranes, so the osmosis pressure drives the brew out of the highly concentrated chambers of the coffee grounds out to the more watery surrounding environment. Grind The grind is akin to sea salt, the crystallized table version. Too fine and the filter clogs, too course and the coffee is not extracted properly. Grinding it is knife edge work...but with our x wing technology filters the coffee is ground, sealed and ready for you almost instantaneously.

While the bitty K-Cup that contains the coffee to make a Keurig do its thing may not seem like that much waste on any single given day, they add up. A lot. "In 2014, enough K-Cups were sold that if placed end-to-end, they would circle the globe 10.5 times, reports Lloyd Alter in a story on the pesky cups. Almost all of them end up in landfills. They are not recyclable." And indeed, the Atlantic notes that 13 billion of them went into landfills last year. Your K-Cup coffee i...s taking its toll. Yes, the method may seem convenient, but are a few minutes saved really worth covering the globe in non-recyclable, non-compostable plastic? And what about ritual? While a full-fledged traditional Japanese tea ceremony may be a bit much for your morning routine, the simple act of making coffee, when done with love (and seriously, that first cup of coffee deserves some adoration) can be a wonderfully affirming way to greet the day.
