First on our summer food list is tofu! Tofu is made from the mature soybean (vs. edamame, which is made from young soybeans). To be digestible, mature soybeans... need to be processed by soaking, blending, cooking, and mixed with a solidifier to make tofu. Once made, tofu is an easily digestible protein; it contains B vitamins, is high in minerals, including calcium, and is low in calories. According to Chinese Medicine, tofu is cooling in nature, it benefits the lungs and large intestine, it moistens dryness, relieves stomach inflammation, and neutralizes toxins. Traditionally, tofu was also applied as a poultice to treat concussions. During this summer time we need less food to keep the body warm, so eat less and lightly. At this time of year food should be cooked lightly. For example, for a stir-fry use high heat for a short amount of time. Caution should be taken when eating too much cold or raw food. This causes contraction and deficiency in the body causing the digestive system to shut down. Make sure to moderate!
