Here’s my lighter take on delicious Jamaican-style Stewed Peas and rice. I was introduced to this budget-friendly side dish as a teen and it’s a fave of mine to this day along with Oxtail , Curried Chicken and Brown Chicken It’s got all the components of a comfort meal- packed with flavour, filling and easy to make. . . . Brunch done right! Eating brunch doesn’t mean you have to break social distancing rules or stray away from healthy eating. With a little extra attention to detail and quality ingredients you can still enjoy time with friends or family. . . This past weekend I had 2 friends over and I found it simple to keep them safe by setting up a little plating and glassware kit for each guest ahead of time. This way upon their arrival they were sure that their plating was untouched by ...others and they didn’t have to share common utensils. I used some colourful plating and napkins to help keep things festive- it’s been a tough year for everyone. . . I used organic ground Turkey to hand-roll my own sausages and added a dash of nutmeg to the scrambled eggs, always a fave. Are You a #fishnchips lover? Check out my awesome takeout lunch! Just a l’il squeeze of grilled lemon, that’s right folks pay attention to detail, wow what a boost! The batter was crisp and light, not too greasy and the chips were so good, definitely hand-cut in house. I have to say at first I thought the coleslaw looked a little lacklustre... not really saucy or too colourful. Turns out the Chef tricked me and this slaw packed a hidden punch. On my last trip to Grand Cayman in the beautiful Caribbean I picked up a bottle of Mango Coconut pepper sauce. It had an eye catching bright orange-yellow colour and I love coconut so I had to try it! Wow it’s amazing- it would seem coconut twice would be redundant but it works! The sauce has a sweet~ tangy flavour and the just a touch of smokey spice. It would taste amazing as a chicken marinade, stir fry sauce or even sushi dip! Check it out!
