Cooking IN Quarantine Windermere community 08.11.2020

Moroccan Lentil Soup 40min for about 5 people Ingredients 1 large onions, diced 6 tbsp olive oil... 1 tsp ground dried ginger (optional) 1 tsp ground cumin 1 tsp ground sweet paprika tsp ground black pepper, plus extra to taste tsp ground cinnamon tsp ground turmeric tsp ground cayenne pepper tsp ground nutmeg (optional) 750 g water 2 vegetable stock cubes (brouillon) or 1 tbsp dried veg stock 140 g red lentils or any other lentils 800 g crushed tomatoes, canned is fine 1 pinch salt, adjust to taste 2 - 3 sprigs fresh coriander, leaves only, to garnish (optional) HOW : 1 - in sauce pan add olive oil + onion cook for 4min on medium heat than add the lentils stir for 1min. 2- Add all the spices 3- Add tomatoes 4- Add Stock 5- cover and cook for about 30min to 35min 6- uncover and check that lentils are cooked 7- Add Salt & Pepper to your licking Serve with generious drizzle of extra virgin olive oil and cilantro, parsley whatever herbs you like. For me i had some feta cheese i added some on top and origano Of course you can add : crispy bacon bite, Canadian bacon cut small and sautéed, cheddar bites, green peas, fried onion it's limitless. Et voilà, Enjoy
