We’re going to try something new over here and begin sharing some of our favourite plant-based recipes from our kitchen and the kitchen’s of some of our plant-based friends for you guys to enjoy at home! And we’re starting today with this delicious vegan maple walnut banana bread (that’s also gluten-free!) from Toronto based holistic nutritionist Stephanie Grant (@the_naturalblonde). So yummy and so simple, it’s the perfect healthy weekend treat (or quick morning breakfast wh...en you can’t make it into your local copper branch ). We hope you enjoy!! Vegan Maple Walnut Banana Bread 1 1/2 cups oat flour (you can make your own by processing whole oats in a blender) cup large rolled oats 2 tsp. gluten-free baking powder tsp. sea salt 1 tsp. cinnamon 1 cup mashed over-ripe mashed banana (from about 2 bananas) cup coconut oil, melted and cooled cup unsweetened applesauce cup maple syrup 1 tsp. vanilla 2 flax eggs cup chopped walnuts (or swap chocolate chips for nut free option!) Pre heat oven to 350 degrees and grease a loaf pan (I also like to add a strip of parchment to the bottom to easily lift the bread out when ready). Combine all dry ingredients except the nuts in a large bowl and stir to combine. In another bowl, combine the mashed banana, applesauce, maple syrup, vanilla, and the flax eggs and stir to combine. Add in the coconut oil and stir again. Add the dry ingredients to the wet and stir until just combined. Lastly, fold in the walnuts and pour into the loaf pan. Bake for 50-55 mins or until golden brown around the edges and a knife inserted comes out clean. Allow to cool slightly before removing the bread from the pan. PLEASE eat some while it’s warm because banana bread is best enjoyed fresh out of the oven. The rest can be stored in the fridge for up to a week. Photo cred: @the_naturalblonde See more
