Cooking with Coral Wednesday's recipe: Eggless French Toast! Love french toast but sometimes my body dislikes eggs-alot!! So over the holidays I thought I'd try something...and voila it works!!... 2 slices GF bread (or regular) 1/2 c coconut nog 1 tbsp tapioca flour 1/2 tsp cinnamon 1 tsp vanilla *Mix tapioca with coconut nog until well incorporated, add cinnamon and vanilla. *Dip your bread into the mixture coating both sides. *Place in a hot skillet, flip when golden brown. *Serve immediately with syrup, fresh fruit!! I found that it took a bit longer to cook than it does with eggs but wow, so good! You can substitute the coconut nog with any thick milk substitute that you like, ie: canned coconut milk. Cooking with Coral Wednesday's recipe: Paleo Pizza Took a while to find a crust that I liked, that didn't taste like cardboard! Found this recipe and it's been my stand by for a few years now, made some changes so it fits our pizza iron pan.... 2 c almond flour 1 c arrowroot flour 1 1/2 tsp baking powder, salt and dried oregano 1 tsp dried basil and garlic powder 1/2 tsp black pepper and red pepper flakes 3 eggs 5 oz coconut or almond milk Preheat oven to 425F. Grease a pizza pan with coconut oil. In a small bowl whisk eggs and coconut milk. In a large bowl add all your dry ingredients and mix well. Combine the wet and dry ingredients into one bowl, it should be runny like a pancake batter, if not you may need to add more coconut milk. Spread the batter onto the greased pizza pan and cook for about 10-12 mins. Remove from oven and slide a spatula all around under the crust for easy removal once your pizza is completed. Keep oven on 425F Add what topping you like, and cook about 12 mins or until done to your likeness. Cooking with Coral Wednesday's recipe: Mostly Paleo Cherry Pound Cake So this is hubby's favourite, he set out to find a way to make it with paleo flours for me!!... First we needed a paleo flour blend substitute 1:1- 2 c almond flour, sifted 1 c arrowroot flour 1/2 c coconut flour, sifted 1/2 c tapioca flour Sift almond and coconut until no clumps remain, combine all ingredients together and whisk well. Store in airtight container Cherry Pound Cake 2 c paleo flour substitute 3 tsp baking powder 1/2 tsp salt 1 c butter 1 pkg cream cheese (8 ounces) 1 c brown sugar 4 eggs 1 tsp vanilla 1 tsp almond 1 c maraschino cherries, drained and cut in half 1/4 c paleo flour substitute Heat oven to 325F Grease and flour or add parchment paper/liner to a 8 inch tube pan. Mix together flour, baking powder, salt-set aside. In a large bowl cream together the butter, cream cheese and sugar until light and fluffy. Beat in the eggs on at a time. Stir in vanilla and almond extract. Beat in the flour mixture until just incorporated. Dredge the cherries in the 1/4 c flour, then fold into the batter. Spread into prepared pan. Bake for 75 mins or until toothpick comes out clean. Let cool for 10mins in pan then turn out onto wire rack to completely cool.
