With Much anticipation! Here it is!! A crazy experiment gone so so well! What a delicious meal! Big Thanks to all those involved!

In coordination with Lakeside Dairy-Jeff Nonay and RGE RD Restaurant-Blair Lebsack A year ago the unthinkable happened and Jeff of Lakeside Dairy lost his barn and over 100 animals to an electrical fire. A year later the barn is rebuilt and ready to go; to show appreciation for all those who have supported his family and lended a hand in the whole process over the past year he is throwing a Dinner in no other place but his new barn! Jeff approached our shop to help him with t...his wonderfully crazy experiment to make what is usually done with a pork belly called a Porketta and use the same concept but with one of his gorgeous Waygu Beef that he takes so much pride in rasing on his farm. Our lead butcher Travis, alone with Jeff himself and the owner of RGE RG Restaurant Blair all got together this morning to give it a go! The final product was way more than we could have expected; this 97 lb beast, with tones of mouth watering marbling was season by Blair, put on a spit for Jeff to take out to the farm which he will cook for 6-8 hours for his Barn Party tomorrow!
