Peppermint Mocha Cookies Swapped in a few better for you ingredients to create my first batch of holiday cookies. These are super simple to make and are grain free, full of healthy fats, and low on refined sugars. For the cookie dough:... 1 1/4 cups almond flour 1/4 cup raw cacao powder (Cocoa powder will work as well) 1/4 cup coconut sugar 1/4 tsp baking soda 1/2 tsp baking powder 1/4 tsp sea salt 1/4 cup pure maple syrup 1 tsp. Peppermint extract 2 tbsp. Coconut oil 1 egg What to do: Mix all the dry ingredients in a bowl and stir until combined. Whisk together all the wet ingredients in a separate bowl and then slowly add to the dry mixture. Let the dough cool in the fridge for min. 20 minutes as it will be very sticky. Scoop about 1.5 tablespoons onto a cookie sheet and bake at 375 F for 10 minutes. BBQ Chicken Tortilla Pizza If you saw my stories from earlier this week you would have seen my veggie deluxe tortilla pizza....now I’m hooked! I’ve been making a different variation almost everyday and this one is by far my favourite! This is such an easy recipe that requires minimal ingredients and is so great for sneaking in extra veggies throughout the day! What you’ll need:... 1 medium tortilla 1/2 tbsp. Coconut or avocado oil 1 tbsp. of bbq sauce 2 tbsp. Mozzarella cheese 1/2 cup shredded chicken 1 handful chopped spinach Preheat your oven on broil. Crisp the tortilla in a pan with oil until it becomes nice and crispy. Add your toppings and broil for 2-3 minutes. Make sure to keep an eye on it as it will burn fast! CINNAMON ROLL COOKIES Using my favourite grain free cookie dough! I post cookies with this base all the time because it is so versatile and fits pretty much every dietary need. For the dough:... 2 cups almond flour 1/3 cup maple syrup 1 egg 1/4 cup coconut oil 1 tsp. Vanilla 1/2 tsp. Baking soda For the cinnamon sugar: 2 tbsp. Coconut sugar 1 tsp. Cinnamon Slowly add a little maple syrup to make the mixture sticky Roll the dough into long strips and place the cinnamon sugar in the middle (swipe to see photo). Then roll as you would a cinnamon roll! Place on a baking sheet and flatten (they won’t on their own) Bake at 350 for 10 minutes and you’re done! Here are some common health claims made by manufactures to make you think something Is healthier than it actually is : - simply means that at SOME point a one of the food items was in its natural form - more than one grain (often refined) ....always look for whole grain on the ingredient list not Multi - gluten free does not mean healthy it simple means no gluten is in the product (this usually means more preservatives and sugars to create the same texture and taste) - usually means lower calorie but more sugar Next time you’re in the grocery store don’t let these claims fool you! One of my favourite FALL inspired salads Sweet Potato & Brussel Sprout Caesar Salad 2 cups mixed greens ... 1/2 cup roasted sweet potato 1/2 cup roasted Brussel sprouts 1 tbsp. Pumpkin seeds 1/2 cup tofu as my protein but this also works great with chicken! For the dressing: 1 cup plain Greek yogurt 1/3 cup lemon juice 2 tbsp. Olive oil 1 tbsp. Dijon mustard 2 tsp. Worcestershire sauce 1 tsp. Minced garlic 1/2 tsp. salt 1/4 tsp. Ground pepper Foods grown out of season are not able to follow their natural growing and ripening rhythms. Studies on broccoli have show that when grown during its peak season (Fall) it contained a significantly higher vitamin C content than broccoli grown in the spring! Food travelling less km will also lose less nutrients on the journey!
