Make your own Kimchi at home with Berry-Apple Kimchi paste. It is already fermented and ready to mix with Napa cabbage even radish. Some experiment is being done for another level of Kimchi.
Pear-apple white Kimchi, it is a little different process of fermentation than regular red spicy Kimchi. The juice is a key point of savory, not much salty or spicy. You can see bubbles on top during fermentation.
Grab and go Kimchi in a jar. Apple and goji berries are key ingredient of our Kimchi called Berry-Apple Kimchi

This is not a traditional or authentic sushi, just CRISP style itself. A traditional nigiri-sushi is rolled around on palms and fingers several times but this is made by different and easy ways using bamboo mat. Everyone deserves to make and enjoy sushi by oneself.

introduced salmon teriyaki bowl beginning of 2016. Spring mix with home made soy vinaigrette, pan fried vegetable and salmon with teriyaki sauce, everything is on sushi rice in a bowl. It is served with miso soup. A several customer had a chance to try teriyaki salmon belly. We usually use 14-16lb of whole salmon and get a half pound of belly just two serving portion. You can see a small piece of onion, it is the main key of its flavor for sure. Enjoy lunch deal on Tuesday.
Tofu-Kimchi (well fermented napa cabbage salad with firm tofu) is usually served as side or main dishes at Korean pub. The traditional style of tofu-Kimchi is stir-fried with meat, especially pork and served with sliced tofu. After stir-fried or sauteed, the texture is a bit changed to soft. The following photo shows just crunchy, well fermented Kimchi it self without meat or heating. Wrap it up and try it. That's all.
Butter caramelized sweet potato, which is a kind of traditional Korean snack or dessert. It is made from crispy sweet potato, pecan, almond , cranberry and very thick rice malt syrup. Usually it is not made with butter but CRISP HERE tries to do a different style of taste. It works.
Seaweed Soup () is a traditional Korean soup, which is eaten on birthday breakfast with rice. It is usually made from seaweed, seafood or beef and beef based broth but it can be made from tofu and vegetable broth for vegan diet. The ground wild sesame seed from our garden is used for garnish, final touch of aromatic flavor. One more, seaweed ( miyeok) contains a high contents of calcium and iodine, nutrient for nursing mothers.
Gimbap is available at CRISP HERE now. Beef Bulgogi, carrot, zucchini, pepper, avocado and seasoned gourd, they are the ingredient of this Gimbap as posted. We are trying to make other combination like shiitake mushroom, grilled bacon, sausage or all spring mix. Most edible stuff should be a good ingredient.
CRISP HERE is sitting in this drawing of area map in Burlington. Actually, Google map is much better to get a direction than this. It is not precise or modern, just old fashioned. Hope everyone can find it easily using this unsophisticated map and enjoy food.
Gimbap () is a Korean dish made from steamed white rice (bap) and various other ingredients, rolled in gim (sheets of dried laver seaweed) and served in bite-size slices. Gimbap is often eaten during picnics or outdoor events, or as a light lunch..... https://en.wikipedia.org/wiki/Gimbap [This is a general description of Gimbap from Wikipedia. There are a lot of variation and ingredient in Korea or CRISP HERE :)]
Sweet treats at Crisp Here - green tea, ginger and black sesame ice cream.Everyone knows green tea ice cream, some people know ginger but only a few people know black sesame ice cream. They are not extremely sweet like a conventional one but enjoyable for sure. Would you like try a cold treat in cold winter season?
Sashimi plate with crisp salad and a little sushi rice. It is not much variety of fish only tuna and salmon. SOMETIMES, if we have a good quality of belly part, you can have a chance to try it but not every time. Tuna is a good match with sesame oil and a little pinch of sea salt, especially tuna belly. At country side of southern Korea, they enjoy the sashimi with soy bean paste mixed with red chili paste. Can you imagine sashimi with soy bean paste not soy sauce and wasabi? It is not popular but awesome taste.
Seaweed Roll () is very popular street food in Korea. It is usually prepared at food cart, truck or very small tiny casual restaurant. Major part of seaweed roll is sweet potato noodle and root vegetables, well balanced with seaweed (laver) which is same material of sushi roll. The taste can not be described exactly what it is. But the more chewing, the better feeling. If you like a kind of fishy taste of seaweed or the salt tang of sea air, it would be your favorite.
One of our favorite small dish, sweet potato noodle with grilled shrimp, is ready for take-out today. We offer some modification with organic tofu on top of it instead of shrimp. This small dish includes some vegetables which are burdock, carrot, parsnip and zucchini, usually root vegetables. It is a little bit different from others, but a little bit higher quality in town for sure!
Actual ingredient of Salmon POKE bowl. It was taken a photo after sold today lunch time. The recipe is still in progress. I would like to keep the balance between the raw fish and the seasoning.
is happy to introduce POKE rice bowl. POKE is the Hawaiian raw fish salad which includes tuna, salmon or various shellfish. The seasoning is based on soy sauce, sesame oil and a little touch of Korean flavor as red chili vinaigrette. This POKE bowl is mixed with tuna and salmon.
Rainbow roll with Wakame(seaweed) salad, which is covered with fresh tuna and salmon only. It is a little bit different from other places'.

Asparagus Pepper Roll with Tofu Salad for $13, no raw fish or meat at all. There are several combinations of vegetarian or vegan diet. The dressing is same as Crisp Salad and contained "Onion Soya". Simple word but the process is a little bit complicate. Ellis knows how to make it.
Finally, I took a picture of two dishes, Teriyaki Salmon and Chicken Cutlet Bowl (or CUP) for take-out. A slow day, a customer placed an order these dishes and I got a chance to take a photo. Thanks for ordering and giving a chance. This container is made of eco-friendly paper. Looks great, isn't it? Hopefully, the food would be enjoyable for them like a nice eco-friendly container. MISO soup, definitely included.
Baby spinach and bacon roll, seaweed outside.
This is not a new menu, a little bit ordinary but affordable combination California roll with Crisp Salad for $11.
planted basil seeds at CRISP HERE last week. This basil seeds were harvested last year and brought here. Usually make basil pesto for noodle, Bulgogi and Chicken cutlet sandwich.
Wild sesame (perilla) seeds, planted around ten square foot small space last year. I got one bowl of seeds like this. This year you can see them at CRISP HERE. Just two small pots. It might be enough for this place.

onion soy-n-butter rice bowl with seaweed flakes and sunflower seeds. It is the latest version of comfort, easy and affordable daily meal. Very long time ago, it used to be made with steamed rice, soy sauce and margarine not butter. Butter was very rare and so costly at that time. It is simple but soulfully delicious. This makes an wonderful combination of aromatic dark salty and creamy flavor. With a piece of well fermented kimchi is another way to enjoy no doubt.
One is a medium fermented kimchi and the other one is well done. Can you recognize which one is medium or well? When I was young (fresh), I preferred to have well fermented (old aged) kimchi rather than medium or fresh one. But the older I grow, the less fermented I prefer contrary. I feel like drinking Makgeolli with well fermented kimchi and tofu pan cake tonight. https://en.wikipedia.org/wiki/Makgeolli
Very tiny whole fish, it's a kind of dried anchovy family very good source of calcium. Usually use pan fried with rice syrup, honey and some nuts including almond, cashew and pecan. It is good match with sushi rice ball and seaweed flakes.
