New dish a poppin @playestatewinery Chicken galantine stuffed with wild mushrooms, de puy lentils and black garlic/sous vide breast/golden beet emulsion/pickled @mikuniwildharvest chantrelles/@klippersorganics lacto fermented squash/@untangledcider chicken jus and baked chicken skin(cause its the best part of the bird lol)

Some throwbacks and some currents. From salads to octopus(one of my favourite eats) to local albacore tuna( I call her Jessica alba(core) and finally poached prawns and fried Calamari(simple bar food, refined) Refinement and reimagining with strong global flavours is what drives me. #culinary_artisans
