Oven roasted watermelon is DELICIOUS! Soft to the bite and sweeter than uncooked watermelon. To make it, preheat oven to 375F. Cook for 15 to 18 minutes. Drizzle a little olive oil over the asparagus and season with Himalayan sea salt and pepper. For the carrots, in a bowl, I coated it with olive oil, tarragon leaves, honey, salt and pepper and toss around to mix with a spoon. Watermelon was left unseasoned to experiment how it tastes like when cooked. I used a half sheet pan, which can fit in a toaster oven - or in our case the countertop Holman quarter oven. Either oven won’t heat up your kitchen when you need to bake on hot days.

This Instant Pot Pork Chop recipe is ready in 40 minutes from start to finish, with at least 18 minutes of it being passive time. Perfect for a weeknight supper. You can make the sauce ahead of time and marinate the meat overnight in the fridge. (I didn't and it was still juicy, full of flavour and delicious!)
