News! Dark Side chocolates are now available at Grains Bakery! Now you can sit down for a coffee and chocolate or try something on their lunch menu (their bread & soups are most excellent) and grab a pack of chocolates to go for an afternoon snack :) ... Currently the varieties for sale there Nutmeg Pecan, Wild Mint and Smoky Mango Mesquite. https://www.facebook.com/GrainsBakery Thanks to the lovely owner Jennifer for opening her doors and promoting DSC chocolates. It makes me super happy to see local businesses working together :)
I just did up the packaging for a new round of chocolates and noticed that the ingredients say "salt". Now... It's becoming popular knowledge that generic table salt is the worst option of all the different salts available. SO! To clarify:DSC chocolates use only a combination of Himalayan cyrstal salt and unprocessed Celtic sea salts. ... Here's why: http://www.himalayancrystalsalt.com/salt-comparison.html

Did you know that the honey used in Dark Side chocolates is locally sourced from a hobby beekeeper? She refuses to use antibiotics on her bees and keeps her hives on her own property which is also pesticide-free. In following the non-violent support of the honeybee, I invite you to read up on the following information regarding neonicotinoids - a growing nightmare for bees and bee-keepers alike. The EU has banned it entirely and Ontario has put an 80% ban on the stuff. Albe...rta is still in full support (every canola seed planted is coated with it.) Sprouting, a process of mimicking natural germination is a process that boosts the value of nuts and seeds in more ways than one. Here's why DSC chocolates are made with only sprouted nuts and seeds: http://foodmatters.tv//the-benefits-of-soaking-nuts-and-se

Holy smoke! I'm almost out of chocolate! Time to get back into the kitchen! Thank you so much to those of you who have supported with your purchases as well as promoting, supporting and guiding me along in this weird business world. I'll be experimenting with new ingredients and will hopefully have something new for all y'all to try out. I'm thinking wild sage & brazil-nuts?
Thanks to everybody that came out to Taste of the Peace on Tuesday night. It was a great turn-out and I had an awesome time mingling with other regional growers, processors & processors. I made some great new connections and managed to network with a group of people whom I would otherwise would possibly never have had an opportunity to connect with. - I highly recommend checking this event out next year to any upcoming food-related, local businesses.
Hey folks. I'll be promoting and sampling out my chocolate and (probably talking politics & spreading grass-roots propaganda) tomorrow evening (Tuesday Feb 17) from 6-9pm at the Taste of the Peace event taking place at the Pomeroy Hotel. Come on out and see what the Peace Region has to offer - this event is a mixer of local producers, buyers, restaurant owners, foodies & entrepreneurs alike. I`m pretty sure you could fill yourself up on tasty treats too ;) Hope to see you t...here! http://www.growingthenorth.com/default.aspx
The winner of the Valentine's-Day draw is Lyn! Congrats homie! Hope you like 'em! Stay tuned folks for more upcoming draws & contests!
Okay, folks. So at 53 "likes" in under 24 hours, I'm feeling pretty good about this draw. Except that Facebook will only show me about 1/2 of the people who actually "like"d the page. Due to the short timing of this draw - (un)Valentine's Day being TOMORROW - the only current option I can think of doing is following through with this draw - and then inviting everyone who has "like"d this page to enter their name in a draw in the future. ... I'm hopeful that my posts reach all of those who liked the page, so stay tuned for another draw in the near future - independent from FB's notification/privacy blips. See more
The Dark Side Chocolatier (Matthew Charbonneau), is dedicated to producing chocolates of the highest quality possible, using only the best ingredients he can acquire. With a commitment to quality, local sourcing and community integration, he hopes to remind people that chocolate is a whole food to be eaten with enthusiasm, awareness and satisfaction. DSC chocolates are a combination of soaked or sprouted nuts and seeds, chocolate, herbs and spices, and a variety of different sweeteners (but never white-sugar) that you can bet your sweet buns is a tasty and healthy treat for chocolate lovers across the board. You can find his chocolates for sale at Homesteader Health Foods (downtown), the Health Hut (in the mall) and will soon be found on the counters and displays of local bakeries and cafes.
