Amazing Garlic 4/5: Harvesting and curing your garlic crop. Fast forward to August, you’ve already harvested the garlic scapes a month ago and have them in yo...ur fridge for future cooking, freezing and pesto making! Your tall garlic stocks have leaves that are starting to go brown... it’s time to pull your garlic bulbs! To harvest, use a pitch fork to loosen the soil around the garlic. It’s a good idea to make sure you’re at least 5 inches away from the plant so you don’t pierce the bulb! Once the soil is loosed, pull the stock at the base and gently pull straight up and out. Knock off the caked on dirt from the bulb, no need for washing as you want the bulbs dry so they can start the curing process. To cure your garlic, hang in small bundles in a cool and dry space. If you have wire racks you can also lay them down in layers (2 max). Turn or fluff your garlic every other day to ensure that all sides are properly drying and receiving air flow. After 3 weeks to a month your garlic should be cured and ready for the stocks to be snipped off. Cut the stock 2 inches from bulb and store in a either a paper bag or a container without the lid on. (We find that potato sacks work well for this). Keep in a cool and dry area! Your cured garlic will store for 3-6 months and longer if processed! Everyone is welcome to join me on Wednesdys 9:15am- noon at the Apothecary's Garden (85 Oak knoll; where the Churchill Park community garden and Aviary are) for harvesting, garden tending, seed saving, dividing perennials to send to new gardens, medicine making, and, it seems, we are back to medicine tasting.... Yesterday I made liver healing milk thistle seed capsules and a food variation I will bring this week for sampling and we can harvest milk thistle seeds from the plant there. I will be hosting these Wednesday mornings through all of September and October, same time. In case of rain or other unpleasant weather please be in touch with me to confirm us meeting up.
