From the time the "ber" months arrive (October onwards), radio stations would start playing Christmas songs, lantern vendors start lining up the streets with their colorful parols and people are now anticipating one of the season's favorite treats - the BIBINGKA. The bibingka is the perfect sweet & savory treat. It is baked in a clay oven with charcoal at the bottom and on top. The base is a sw...eet rice cake with slices of salted duck egg, sprinkled with cheese and topped with butter and grated coconut. My version does not look exactly the traditional one. It still has all these components and taste exactly like how it is supposed to. But, I elevated it a bit by using whipped butter, toasted coconut and smoked asiago cheese crisp (this made all the yummy difference!)
