This post is a little late - I had a lot of garden tomatoes ripen all at once so I decided to make some roasted tomato soup. I also fried up tomatoes in garlic and olive oil with salt and pepper to have as a side at dinners. So delicious!

Give me a thumbs up if you like fast dinners! If you're in a hurry, but still want a nutritious meal, try picking up a whole cooked chicken from the grocery store. Here are some ways to use it to make quick & healthy meals: Add chicken, veggies, and cheese to a pre-made pizza crust with pesto! Serve with a side salad. Make a chicken taco salad! Top mixed greens with chicken, veggies (like pepper, avocado, tomatoes, cucumber, etc.), salsa, and cheese. Serve with a pita.... Make chicken quesadillas. Make penne pasta with sauce of your choice and add chicken and steamed broccoli. Add chicken to a whole wheat bun with BBQ sauce and lettuce to make BBQ chicken sandwiches. Serve with a side salad or broccoli slaw.
