Warm Blueberry Pudding Adapted from @lyngenetplan 1 cup chia seeds 2 cups blueberries 1 can coconut milk... 1 tbsp honey Sprinkle of salt and cinnamon Small handful of sunflower or pumpkin seeds. Bring all ingredients but to low boil, then reduce to simmer for two minutes. Enjoy warm, store left overs in fridge to have warm or cold later. Think of it as a warm chia pudding. We topped ours with a little coffee cream. See more

Virtually this time of course, I’ll meet with students who are working through the four year post undergraduate program to become our next Naturopathic Doctors . My role @stfrancisherbfarm includes sharing my passion for herbal medicine with students and practising professionals across Canada.

If you’ve been following along for the past month you’ll know I joined a group of friends to complete @caprarunning and @sequoiatrinity challenge to walk, run or hike for 30 minutes per day, everyday in November. Without a treadmill, this became an outdoor challenge for me too. I managed to explore a few little new to me sections of Centennial Park, Dieppe trailway, Irish town Park, Humphrey Brook and the trails along the former Lake Petitcodiac. When the Atlantic bubble... was open I ran the Harvest Moon trail in Wolfville and watched the sunrise at its reservoir trail. I hiked the Shediac outdoors association trails frequently, as well as those closer to home @plageaboiteaubeach, Cormier village, and the beautiful trails that interweave my little neighbourhood. This evening, in Cap-Pele, on my 30/30 I explored a brand new section of trail designed to be used by fat bikes this winter and mountain bikes in summertime. I’m sharing all of this because; -It was fun -It was simple -I have a sense of pride in my simple accomplishment. -There are likely amazing trails close to where you live and/ or work too. The ones I’ve listed were all free, kept clean, quiet and felt safe. I challenge you all to find a trail within 10 minutes of your home, I use the @trailforks app whenever I’m in a new place to help me locate new spots to explore! Enjoy

That’s the last of the kale, and a few little late broccoli. Gardening is something I romanticize until I’m out there among the thick swarming mosquitoes . I could certainly get used to the fly free late November gardening though. It’ll be green smoothies all around for the rest of the week.

A time to take pause to remember those who fought in war & in peacekeeping efforts. A day to express gratitude for those brave enough to sacrifice their lives for change. A prayer for those soldiers, in parts of the world experiencing unrest, who are fighting now. Hope for continued peace on our soil.

A little late roasting our jack-o-lantern pumpkin seeds, but they are delicious. If you have some seeds waiting in the fridge too, here are some hints I found @salads4lunch blog. Wash them off super well, boiling them for 10 minutes in salted water, sprinkle with salt (I was very generous), drizzle with a little oil (I used olive), then roast at 325 checking every 10 minutes or so, I took mine out after ~65 minutes. These guys are loaded with zinc, are high in fibre, and are a fantastic plant source of protein.

November tends to be a bit of a slump month, mountain biking is slowing down, snow isn’t here for cross country skiing yet, I jumped into @caprarunning #capra20203030 challenge to run, hike or walk 30 minutes per day, everyday in November. Then along came @sequoiatrinity with some rad swag and a 30 x 30 challenge of their own. Loving all the support and camaraderie, and am totally inspired by all the others posting their challenge pics. As a little extra challenge I’m attempting to explore as many different local trails as possible as I complete my walk/ run/ hikes today was in Barachois by the Historic Church .
