I love veggies! Just looking at the beautiful colours as they cook in the pan makes me happy! And they are delicious The more veggies I eat the better I feel! No longer bloated or feeling like you just are a brick! I feel lighter and more energetic! It may take a little longer to prepare fresh vegetables but it is so worth it! You are paid back by feeling better for way longer than it took to prep them! ... So how many vegetables are you eating in a day? Could you increase that by one more serving? Try it out and see how great you feel!

I think it is safe to say we are all glad to say goodbye to 2020 and hello to 2021. It's been a rough year and it will be good to move forward. Of course things may never be as they once were, but hopefully we will be able to get a new 'Normal". of course I have to mention your health! The time to start is now! I'm not talking about New Year's Resolutions! I'm talking about real and lasting change! Habit change! If you've been struggling hire a coach to help you. Mmmmmmm Yummy!!! One of my new favourite breakfasts; a smoothie bowl! Full of everything you need to start your day right; protein, fibre, veggies, vitamins and minerals! This one is a Mango, green tea! Yup, there is mango in there! 1/4 cup ice... 1/4 cup frozen mango 1/2 frozen banana a large handful of spinach or other greens 1 teaspoon of matcha green tea or to taste 1/2 cup Almond milk or more if needed Bend to desired consistency. Top with favourite fruit and granola. Enjoy!
Cheesy Cauliflower Soup! Baby it's cold outside! I love soups in the fall and winter! They are easy and quick to make and don't take up a lot of dishes. I hate washing dishes!!! Bonus is that they can be super full of delicious and nutritious veggies! This recipe can be made with broccoli, carrots or cauliflower. Is this what I serve my family for dinner? You bet! ... Do I add anything else with it? Nope! It's a full meal! You can if you like, but me and my family find it filling enough on it's own. And if you have extras it makes a great lunch! ingredients 3 cups Cauliflower 4 cups broth 1 1/2 cups peeled and diced potatoes 1 diced onion 1/4 cup flour 1 tbsp butter or olive oil salt and pepper to taste bay leaf 1 1/2 cups cheddar cheese 1 1/2 cups milk Saute the onion in a large soup pot with the butter or oil until soft. Add the flour and stir to cook for 30 seconds. Add the broth and the bay leaf and mix until the flour is dissolved. Add the potatoes and bring to boil. Then simmer for 10 minutes until potatoes are cooked. Add the cauliflower and simmer another 10 minutes until cooked. Stir in cheese and milk until melted and hot. Serve and enjoy.
Fajitas! A great, easy and nutritious dinner. Make them with chicken, beef or go vegan with tofu. Add peppers, onion and fajita spice and saute. Add your favourite toppings; sour cream, guacamole, salsa. The skies the limit. One pot, fast to make and fast to clean up! Versatile for the whole family. Enjoy!

Merry Christmas everyone! Celebrate this Christmas safely and enjoy the simple pleasures! This year the celebrations may be different but that doesn't mean it can't be awesome. This year make some new traditions. Play games with the family. Read together! And of course get outside and enjoy some fresh air and nature. Merry Christmas!
Don't take anything personally. Nothing other people do is because of you. It is because of them! This is one we all struggle with. Why was that grocery clerk so angry with me? Why did that guy cut me off in traffic? Why is my spouse so cranky? It must be my fault! All these things are not our fault. That persons reaction is because of what is going on in their lives. The grocery clerk might be having a really bad day. The guy who cut you off in traffic might be worried abou...t a loved one whose in the hospital and he didn't even see you. Maybe your spouse had a tough day at work. Maybe they are angry because of their past? There are many reasons, but to assume it is because of us only drags us into their discomfort. So, next time you find yourself being upset by how someone has treated you, remember "Don't take anything personally"/

The Third Agreement: Don't make assumptions! Oh man, I have done this! Assuming I know what the other person's reality is or assuming I know what they are talking about when I actually have no idea! When I stop and take the time to ask questions or to clarify what they mean the situation becomes so much clearer. This agreement is related to Don't take anything personally. If you are taking something personally you are assuming what is going on in that person's life without r...eally knowing. Next time you catch yourself assuming what's going on, stop and take the time to question whether that is definitely true.
Take a moment today to thank all those who protected our country in the past. Even today when the world is in a bit of chaos it is nothing compared to what happened during those world wars. I hope to never know what that is like and I am grateful and happy to be able to live in a free country, have great health care and a government that cares about my well being. THANK YOU!
