Perfect Pumpkin Smoothie for Fall! 1 cup unsweetened pumpkin puree * see note below 1/2 of a banana 1 cup unsweetened hemp beverage... 1 scoop protein powder (I use the brand Boku see link below) 2 tbsp maple syrup 1/2 tsp vanilla extract 1/2 tsp cinnamon 1/4 tsp nutmeg 1/8 tsp ginger Ice optional Place in a blender and blend until smooth * It is best to prepare your pumpkin puree yourself from a fresh pumpkin. To prepare, just cut your pumpkin into quarters, scrape out seeds and place on a baking tray. Bake at 350 F for about 45 to 55 minutes, or until tender (test by sticking a fork in it). Once tender, let cool and then scrape out pumpkin from skin into a food processor and blend until smooth. Transfer pumpkin to storage container and keep in the fridge. If you’ve baked a large pumpkin, you may have to cook it for a over an hour. If you have too much to use within a week, pumpkin can be frozen and thawed for a later use.
