Sourdough bread. You can bet this is one quarantine trend I jumped on real quick. Sourdough is made using wild yeasts from a renewable starter culture that lives in your fridge, rather than the store bought bakers yeasts that were so elusive this winter as everyone snapped them up from the shelves. ... Sourdough is a better option for bread anyways. The wild yeasts from the starter are stronger than traditional bakers yeasts, allowing for a longer ferment and the production of lactic acid. This lactic acid is what gives the bread its sour flavour. The longer fermentation period of the bread breaks down gluten, meaning people who are normal sensitive to wheat and gluten MAY be able to tolerate sourdough (maybe, maybe not). The ferment also breaks down phytic acid, a compound found in most grains that binds mineral and vitamins and prevents absorption. Sourdough has less phytic acid, meaning the nutrients are more absorbable for us. All in all sourdough is delish, is better for you, and is always a good skill to learn. What does wellness look like in 2021? 2020 really put us through the ringer, and although we tend to focus on the negatives it brought us, it also was a catalyst for big change. Our perspective on health and wellness is changing. We’re beginning to get tired of pills and prescriptions for all of our ailments, and starting to take on an active role in our wellbeing. We started to think more about coming together as a community, taking care of our planet by switching to pl...ant-based diets, using natural products, and shopping locally.
