Trying to eat a bit cleaner, but are tempted by chocolaty baked goods like me? Watch this video! https://www.youtube.com/watch?v=ydGwoHRHMjU Recipe:... Chocolate Chickpea Muffins Low-Sugar, Whole Food and Grain Free! 1 can of chickpeas (~400ml size) 3 eggs 1 whole banana 3 tbsp of coconut oil 1/4 - 1/2 cup of Maple syrup 1/3 cup cocoa powder 1/3 cup chocolate chips 1 tsp baking soda 1 tsp vanilla Set oven to 350F. Put all the ingredients in a blender (except the chocolate chips) and blend it up until nice and smooth. Spoon into greased-up muffin tins. Sprinkle about 4-5 chocolate chips on top of each muffin. Bake for 10-12 minutes (until a tooth pick comes out clean). Let cool on a cooking rack. You can use coconut cream and sparkles for a fun topping if your baking with kids. Feel Good Smoothie Bowl Breakfast Smoothie base: 1/2 Avocado 2 Tbsp Coconut Cream (from a can) 1/2 Cup Vegetable (ie. fresh or frozen carrot or butternut squash) 1 Cup Berries (frozen) 1 Cup Greens (ie. Spinach) Topping 8-10 Walnuts, crushed (or any other type of nut or seed), for a bit of crunch 1/2 Cup Blueberry compote (ie. cooked down berry sauce), for warmth and sweetness 1/2 Tsp Cinnamon, to taste Put the smoothie base ingredients into the blender and blend up without adding water. You want it to be as thick as you can make it. The blender toggle is a great tool to employ here if you have one (comes with heavy duty blenders such as the Vita-Mix). Scoop it out into a bowl and add the topping ingredients on top. Eat with a spoon and a warm cup of tea. Enjoy!
